Pioneer Woman Crock Pot Beef soup
(This recipe is adapted from Slow Cooker Beef Stew on The Pioneer Woman.) This beef and mushroom soup really hits the spot on a chilly day! I love how the beef gets nice and tender. It’s a true dump and go recipe too, which I’m always a fan of. Greg and I both liked the combination of Worcestershire sauce, tomato paste and balsamic vinegar because it gave the stew a nice, rich flavor. Serve it with a big piece of crusty bread and you’ve got yourself one satisfying dinner!
Ingredients/Substitution Ideas
- Beef broth–or beef bouillon mixed with water
- Tomato paste
- Worcestershire sauce
- All-purpose flour
- Garlic
- Seasoned salt
- Black pepper
- Dried thyme–or Italian seasoning
- Beef stew meat–or a chuck roast cut into 1½-inch cubes
- Onion
- Carrots
- Celery
- Mushrooms–or canned mushrooms, drained
- Balsamic vinegar
- Salt and pepper to taste
Steps
Add broth, tomato paste, Worcestershire, flour, garlic, seasoned salt, pepper and thyme to slow cooker and whisk. Add in the beef and onion.

Layer the carrots, celery and mushrooms on top.

Cover and cook on high for 3-4 hours or on low for 6 hours.

Add in the vinegar. Salt and pepper to taste. Ladle into bowls and serve.

Notes/Tips
- Serve with French bread, dinner rolls, garlic bread or homemade biscuits
- This is a great dump-and-go recipe! You don’t need to brown the beef before adding it to the slow cooker. However, if you have an extra 10 minutes, browning the beef first will add another layer of flavor. After browning the beef add in the onion and celery and saute in the remaining oil for 3 minutes.
- Stir in a cup of frozen peas during the last 10–15 minutes of slow cooking or after pressure cooking. They’ll add some color and extra vegetables.
- Store leftovers in an airtight container* in the refrigerator for 4 days. Freeze leftovers for up to 3 months.
