Amish Lazy Woman’s Cake–this Amish cake is an old-fashioned, one-bowl chocolate cake that bakes up super moist and soft with the easiest batter. No eggs are needed to make this cake!

Amish Lazy Woman’s Cake

Today’s recipe is adapted from Amish 365. The author states, “I suppose when you work as hard as most Amish women do you can be forgiven for wanting an easy to whip up cake, hence, being named Lazy Woman’s Cake. This cake could be considered vegan, a surprise, because there is no egg in the recipe. That’s not an omission. But this quirky cake is good with a thick layer of frosting or dusted with powdered sugar.” I loved tasting some of the batter! It was yummy 🙂

Ingredients/Substitution Ideas

  • White sugar
  • Flour
  • Salt
  • Cocoa powder
  • Baking soda
  • Canola or vegetable oil
  • Vanilla
  • White vinegar
  • Cold water
  • Butter
  • Milk
  • Powdered sugar

Steps

Spray a 6 quart oval slow cooker with non-stick cooking spray.

Whisk sugar, flour, salt, baking soda and cocoa in a large mixing bowl. 

Make a large well in the center and pour in the oil, vanilla, vinegar and water. Stir with a rubber scraper until combined into a smooth batter.

Pour the batter into the slow cooker. (I put some chocolate chips in the batter but they all sunk to the bottom so I don’t recommend do that)

Cover and cook on high for about 3 hours, or until cooked through.

Prepare the frosting. Bring the butter, milk and cocoa to a boil over medium heat. Stir well with a whisk. Remove from heat. Whisk in the salt, powdered sugar and the vanilla. When frosting is smooth spread it on the cooled cake.

Notes/Tips

  • Serve with a cold glass of milk.
  • I used my 6 quart slow cooker. I would recommend baking this in the oven for best results. The slow cooker works but tends to cook a little unevenly. It was more like a spoon cake than a nicely sliced cake.
  • Store leftovers wrapped tightly in plastic for 2-3 days at room temperature or in the freezer for up to 3 months.

For the cake:

  • 2 cups white sugar
  • 3 cups flour
  • 1 1/2 tsp salt
  • 6 Tbsp cocoa powder
  • 2 1/4 tsp baking soda
  • 1 cup canola or vegetable oil
  • 1 Tbsp vanilla
  • 2 Tbsp white vinegar
  • 2 cups cold water

Chocolate frosting (optional):

  • 1/4 cup butter
  • 3 Tbsp milk
  • 2 Tbsp cocoa powder
  • 1/4 tsp salt
  • 2 cups powdered sugar
  • 1 tsp vanilla

Instructions

Oven Instructions:

  1. Preheat oven to 350° F.
  2. Whisk sugar, flour, salt, baking soda and cocoa in a large mixing bowl. 
  3. Make a large well in the center and pour in the oil, vanilla, vinegar and water. Stir with a rubber scraper until combined into a smooth batter.
  4. Spray a 9×13 inch pan with non-stick cooking spray and pour the batter into the pan. Bake for 30 minutes. 
  5. Prepare the frosting. Bring the butter, milk and cocoa to a boil over medium heat. Stir well with a whisk. Remove from heat. Whisk in the salt, powdered sugar and the vanilla. When frosting is smooth spread it on the cooled cake.

Slow Cooker Instructions:

    Hi Karen
    To stop your chocolate chips from sinking to the bottom, save some of your mixed dry ingredients and coat your chips with it, then mix in. I do that with my chocolate chunk banana bread and it works
