Sharon’s Amazing Chicken Casserole

This 5-ingredient and 5-minute prep casserole is a tasty, comforting, old-fashioned favorite! With chicken, green beans and stuffing you’ve got all the major food groups covered . Depending on your needs you cook this in the Instant Pot (30 minutes), Crockpot (2-4 hours) or the oven (45 minutes). I love using the Instant Pot or Crockpot because after the cooking time is up the pot automatically switches to warm and then the casserole is ready whenever we are ready to eat.

Ingredients/Substitution Ideas

  • Cream of mushroom soup–or cream of chicken or cream of celery soup. You can also make your own cream of soups from scratch.
  • 1 cup milk–or evaporated milk
  • Canned green beans–you can also use thawed frozen green beans. The original recipe used peas, which my family is not a fan of. But you can use peas if you would like!
  • Cooked, chopped chicken–I used rotisserie chicken from Costco. You can also use canned chicken. Or try making my Instant Pot Basic Shredded Chicken recipe.
  • Stovetop chicken stuffing–or turkey stuffing

The Basic Steps

  • In a mixing bowl whisk together the cream of mushroom soup and the milk. Fold in the green beans, chicken and stuffing mix.
  • Either cook in your Instant Pot using the pot-in-pot method, in your Crockpot or in the oven.
  • Serve and enjoy! (told you it was easy !)

Notes/Tips

  • Serve with green salad or another vegetables like asparagus, broccoli or brussels sprouts.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Description

A 5-ingredient Instant Pot or Crockpot casserole recipe with chicken and stuffing! With only 5 minutes of prep this is a great busy weeknight dinner recipe. 


Ingredients

Scale
  • 1 (10.5 oz) Campbell’s healthy request cream of mushroom soup
  • 1 cup milk or evaporated milk
  • 1 (14.5 oz) can green beans, drained
  • 2 cups cooked, chopped chicken (I used rotisserie chicken)
  • 1 (6 oz) package Stovetop chicken stuffing

Instructions

Instant Pot Instructions:

  1. In a mixing bowl whisk together the cream of mushroom soup and the milk. Fold in the green beans, chicken and stuffing mix.
  2. Scrape the mixture into a 7-inch by 3-inch baking dish*.
  3. Pour 1 ½ cups water into bottom of Instant Pot. Place baking dish on top of a sling/trivet*. Lower the dish into the Instant Pot.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 30 minutes. When time is up move valve to venting and remove the lid. 
  5. Serve and enjoy!

Slow Cooker Instructions:

  1. In a mixing bowl whisk together the cream of mushroom soup and the milk. Fold in the green beans, chicken and stuffing mix.
  2. Scrape the mixture into your slow cooker.
  3. Cover and cook on high for 2 hours or on low for 4 hours. 
  4. Serve and enjoy!

Oven Instructions:

  1. In a mixing bowl whisk together the cream of mushroom soup and the milk. Fold in the green beans, chicken and stuffing mix.
  2. Scrape the mixture into a 9×9 inch square baking dish
  3. Bake at 350° F for 45 minutes. 
  4. Serve and enjoy!

    is there a way to do this not pot-in-pot? i have all the ingredients but I can’t find a small enough pot 🙁

      With the milk and the cream of chicken soup it will cause the burn error message. You can try cooking in the oven or the slow cooker instead?

      I wondered the same thing since the Amish Casserole recipe calls for only 1 minute

      Yes that’s correct. Because it’s a deep pot in pot dish it takes a while to warm all the way through.
