Aunt Jewel’s Casserole–this easy 5 ingredient Instant Pot casserole recipe with chicken and stuffing. It’s a family favorite.

Instant Pot Chicken and Stuffing Casserole
I used to make a recipe like this when I was first married. It is super fast and easy and Greg loves stuffing so he always ate it happily. I kind of forgot about it until I was browsing recipes on the internet and came across something called Aunt Jewel’s Chicken Dressing Casserole.
It jogged my memory and I thought I would give it a shot in the Instant Pot. I used leftover rotisserie chicken that I had on hand so it was exceptionally quick to make. The cool thing about this recipe is that you can make it with whatever chicken you have on hand…rotisserie chicken, bone-in, boneless, etc.
Greg and I both enjoyed this dinner and it brought us back to our first year of marriage in our basement apartment (which was only $300 a month!!). It doesn’t win any awards for looks but it tastes good. If you’re a fan of boxed stuffing I think you’ll really like this chicken dinner!
Ingredients/Substitution Ideas
- Chicken–boneless or bone-in thighs and/or breasts or rotisserie chicken
- Rotisserie chicken seasoning–this is a new addition to my spice cupboard and I really like it. I buy the McCormick’s brand. You can also make your own from scratch.
- Chicken broth–or water and Better than Bouillon
- Stove top stuffing mix–chicken flavor or another flavor of your choice
- Sour cream
Steps
- Add chicken into Instant Pot. Sprinkle with the rotisserie chicken seasoning. Pour the broth into Instant Pot.
- Pressure cook: Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 10 minutes for fresh chicken or 12 minutes for frozen chicken or bone-in chicken pieces. When time is up let the pot sit for 10 minutes and then move valve to venting. Remove the lid.
- Chop chicken: Remove chicken out of the pot and chop.
- Sprinkle the stuffing mix into the broth in the Instant Pot. Replace the lid. Keep the Instant Pot on warm setting. Let it sit for 5 minutes.
- Finish it off: Remove the lid. Fluff stuffing with a fork. Gently stir in the chicken and sour cream. Serve and enjoy.
Notes/Tips
- To make with rotisserie chicken: skip to step 3. And then in step 4 bring the broth to a boil using the sauté setting before adding in the stuffing mix. Once broth has boiled turn Instant Pot to keep warm setting and sprinkle in the stuffing mix and place lid on top of pot for 5 minutes. Follow recipe as stated from that point.
- Serve with roasted broccoli. I cut my broccoli into small florets and toss with olive oil and lemon pepper. Then I place them on a baking sheet and bake at 425 for 5 minutes, toss and then bake for 4 more minutes.
- I used my 6 quart Instant Pot*. You can also make this in an 8 or 3 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days. This is best fresh and doesn’t freeze well.

- 1 1/4 pounds (20 oz) boneless or bone-in, skinless chicken thighs and/or breasts (or 2 cups of chopped rotisserie chicken)
- 1 tsp rotisserie chicken seasoning
- 1 1/4 cups chicken broth
- 1 (6 oz) package stove top stuffing mix (chicken flavor)
- 1/2 cup sour cream
Instructions
- Add chicken into Instant Pot. Sprinkle with the rotisserie chicken seasoning. Pour the broth into Instant Pot.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 10 minutes for fresh chicken or 12 minutes for frozen chicken or bone-in chicken pieces. When time is up let the pot sit for 10 minutes and then move valve to venting. Remove the lid.
- Remove chicken out of the pot and chop.
- Sprinkle the stuffing mix into the broth in the Instant Pot. Replace the lid. Keep the Instant Pot on warm setting. Let it sit for 5 minutes.
- Remove the lid. Fluff with a fork. Gently stir in the chicken and sour cream. Serve and enjoy.

Making this Sunday and checking with you that nothing is missing from this recipe. Most similar recipes use canned soup. Am I correct in making the stuffing mix in the IP with the broth and letting sit for 5 minutes. Could just do it in a pan on the stove. Thinking that I will saute onion and celery first. When dressing is prepared add in my already cooked chicken and the sour cream. The sour cream throws me. Trusting you that this is correct. Just sounds strange to me. Searching other recipes online and they all have a can or two in their ingredients.
Yep the recipe is right! I didn’t use a canned soup for this version.
Tonight I made this for the third time and it never fails to please. I always thought I’d have leftovers each time and that was my mistake. Tonight I changed it up only because I wanted leftovers! I added one can of drained corn, one can of diced tomatoes (with some liquid-not all of it), 1/4 tsps. dried basil, oregano and tarragon. Absolutely delicious and enough leftovers for one, sigh. Karen, this recipe has so many potential change-ups it is incredible. Thank you so much for your creativity and also your family for their taste-testing abilities.
