Thanksgiving Leftover Casserole

If you love Thanksgiving you’re going to love this casserole. It’s turkey, potatoes, corn and stuffing layered and then drizzled with gravy. If you have leftovers it comes together soooo fast. Even if you don’t have leftovers it’s fairly quick (use instant potatoes, a can of corn, boxed stuffing and a gravy packet). You can also get creative and add in a layer of cranberry sauce, green beans, peas or sweet potatoes.

Serve this alongside more thanksgiving leftovers or some green salad or brussels sprouts. If you have leftovers of leftovers casserole (haha) you can store them in the refrigerator in an airtight container for up to 3 days or you can store them in the freezer for up to 3 months.

Ingredients/Substitution Ideas

  • Cooked and chopped turkey or chicken
  • Mashed potatoes or rice
  • Corn or green beans
  • Stuffing
  • Gravy

Steps

  1. Layer the ingredients: In the bottom of your slow cooker, Instant pot or a 9×9 inch baking dish layer the following ingredients: turkey, potatoes, corn and stuffing. Drizzle the gravy on top. 



  2. Cook the casserole: Slow Cooker: High for 3 hours; Instant Pot: use the slow cooker function and cook on “more” setting for 3 hours; Oven: bake at 400 degrees for 30-45 minutes, or until heated through.
  3. Serve and enjoy!

  • 1 1/2 cups corn
  • 2 cups stuffing
  • 1 cup gravy
