This cornbread chicken casserole is so good that my husband said “it’s straight out of heaven!” It’s got chicken, vegetables and cornbread stuffing. It comes together so quickly and only has a 1 minute pressure cook time in the Instant Pot!

Instant Pot Cornbread Chicken Casserole
If you’re looking for a one pot meal that you can have ready in less than 30 minutes try out this recipe! You’ll need just a little bit of prep time to chop vegetables and then you are home free. My family loved this stuffing chicken casserole, especially Greg! He is the biggest fan of stuffing. If you’re like Greg try out this recipe this week.
Ingredients/Substitution Ideas
- Butter–to saute the vegetables
- Carrots–peeled and sliced
- Celery–sliced or diced
- Onion–diced
- Chicken broth–or water and Better than Bouillon Chicken Base
- Cooked and chopped chicken–I used rotisserie chicken from Costco
- Spinach–coarsely chopped
- Stovetop cornbread stuffing mix–you can also use chicken or turkey stuffing mix
Steps
- Saute vegetables: Turn Instant Pot to saute setting. When display says HOT add in the butter and let it melt. Add in the carrots, celery and onion. Saute for 5 minutes.
- Deglaze the pot: Pour in the broth and scrape bottom of pot so that nothing is sticking.
- Layer in ingredients: Add in the chicken and spinach. Sprinkle the stuffing mix on top, do not stir.
- Pressure cook: Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 1 minute. When time is up move the valve to venting.
- Serve: Stir well. Scoop onto plates and serve.
Notes/Tips
- This was an all in one pot meal for us! But you can serve a dinner roll or salad on the side.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days.

sauté the veggies in the butter4 to 7 min depending on your preference. make the stuffing with the chicken broth instead of water chopped up the rotisserie chicken than mix all ingredients together, if looks a little to dry add some cream of mush or cream of chicken . just a little though. cooked at 350 for 30 min. than if you want crispy on top broil on high for a min or so but watch it carefully at that point
So good and easy but better yet, I had leftovers. I prefer casseroles that use a stuffing mix to be mushy or wet. Although this is good for personal taste preference, next time I plan to add a drained can of diced tomatoes. My gut tells me to add the tomatoes on top of the stuffing and do not stir. Then again, maybe the stuffing goes on top of the tomatoes, not stirring? I would appreciate your expert advice, please? Thank you for all you do.

Can u make this in a crockipot? I didn’t see a recipe at the bottom.
I haven’t tried this one in the slow cooker but I bet you could. You’ll need to saute vegetables first. Then add the ingredient to the slow cooker and cook on low for 2-3 hours.
I forgot to mention that my 2 1/2 year old great grandson asked for second’s this meal is really easy to make and tastes real good

Just made this, and it is wonderful! Only thing I did different was stir half a can of mushroom chicken soup into the veggies. It came out perfectly, and even with the stuffing and soup maybe not the healthiest, it has lots of veggies in it, so maybe that cancels that out! I’ll be making this again and soon!

How long do you vent? Do you use natural release?
You would do a quick release on it. When the pin drops then the venting process is done.
it’s a quick release meaning you just move valve to venting and remove lid when you can
