This cornbread chicken casserole is so good that my husband said “it’s straight out of heaven!” It’s got chicken, vegetables and cornbread stuffing. It comes together so quickly and only has a 1 minute pressure cook time in the Instant Pot!

Instant Pot Cornbread Chicken Casserole

If you’re looking for a one pot meal that you can have ready in less than 30 minutes try out this recipe! You’ll need just a little bit of prep time to chop vegetables and then you are home free. My family loved this stuffing chicken casserole, especially Greg! He is the biggest fan of stuffing. If you’re like Greg try out this recipe this week.

Ingredients/Substitution Ideas

  • Butter–to saute the vegetables
  • Carrots–peeled and sliced
  • Celery–sliced or diced
  • Onion–diced
  • Chicken broth–or water and Better than Bouillon Chicken Base
  • Cooked and chopped chicken–I used rotisserie chicken from Costco
  • Spinach–coarsely chopped
  • Stovetop cornbread stuffing mix–you can also use chicken or turkey stuffing mix

Steps

  1. Saute vegetables: Turn Instant Pot to saute setting. When display says HOT add in the butter and let it melt. Add in the carrots, celery and onion. Saute for 5 minutes. 
  2. Deglaze the pot: Pour in the broth and scrape bottom of pot so that nothing is sticking. 
  3. Layer in ingredients: Add in the chicken and spinach. Sprinkle the stuffing mix on top, do not stir. 
  4. Pressure cook: Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 1 minute. When time is up move the valve to venting. 
  5. Serve: Stir well. Scoop onto plates and serve. 

Notes/Tips

  • This was an all in one pot meal for us! But you can serve a dinner roll or salad on the side.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days.

Ingredients

Scale
  • 2 Tbsp butter

    I made this tonight and also sauted red, yellow, and orange peppers on the side I had honey roasted corn (Green Giant) steamed in a bag really good. And some pineapple apple sauce . Thanks Karen

    I tried it with hamburger it was wonderful. Cook meat crust separately in another pan. Poured out the grease in fall the rest the recipe. It was very good thank you it’s nice to have something you can do with both kinds of meat. Have a blessed day by.

    Wound you just use the stuffing mix – as is- straight out of the box? (like in its powder form /not prepared) Or would you prepare it then put it in the instant pot?

      Yes it says you can use chicken or turkey Stovetop stuffing in place of the cornbread stuffing

    Just made this, and it is wonderful! Only thing I did different was stir half a can of mushroom chicken soup into the veggies. It came out perfectly, and even with the stuffing and soup maybe not the healthiest, it has lots of veggies in it, so maybe that cancels that out! I’ll be making this again and soon!

    This sounds like at least a 4 star dish to me. If I chose to slightly cook the vegs beforehand, layer everything in a Casserole dish with the Stuffing on top, at what temperature should I cook it, & for how long? Thanks.

      You would do a quick release on it. When the pin drops then the venting process is done.

      it’s a quick release meaning you just move valve to venting and remove lid when you can

      Yes you can use crock pot jl you are judging cooking time so watch your casserole closely some people put on high 1hr some longer depends if doubled recipe

      I bet it could. You’ll need to saute vegetables first. Then add the ingredient to the slow cooker and cook on low for 2-3 hours.
