Penny Casserole—an Instant Pot dish with smoked sausage, broccoli, potatoes and a creamy mustard sauce. An easy one-pot-meal!

Penny Casserole
Penny casserole is a one pot dish that you can cook in your Instant Pot with just a 4 minute pressure cooking time! It’s named penny casserole because the sliced smoked sausage resembles the copper coins and it’s budget-friendly! It’s got a creamy sauce that flavors the whole dish nicely. I couldn’t stop sneaking bites of this one!
Ingredients/Substitution Ideas
- Olive oil–or canola oil, vegetable oil
- Beef smoked sausage–or pork smoked sausage, andouille sausage, kielbasa
- Onion–yellow or white
- Water
- Better than Bouillon chicken base–or beef base, vegetable base
- Red potatoes–or yukon gold potatoes, peeled russet potatoes
- Broccoli florets–fresh or frozen
- Sour cream–or 4 ounces softened cream cheese
- Dijon mustard–or yellow mustard
- Salt and pepper–to taste
Steps
Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl it around. Add in the smoked sausage and brown for about 3 minutes.

Then stir in the onions and saute for 3 minutes. Pour in the water and scrape bottom of pot so that nothing is sticking. Turn off the Instant Pot.

Stir in the bouillon to dissolve. Dump in the potatoes…

and broccoli.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up move valve to venting and remove the lid.


In a bowl whisk together the sour cream and mustard. Stir the mixture into the pot.

Salt and pepper to taste.

Serve and enjoy!

Notes/Tips
- We ate this as a one pot meal. However, if you’d like a side dish consider a piece of french bread, some fresh fruit or some corn on the cob.
- I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot. You can cut the recipe in half for the 3 quart pot (keep the water amount the same).
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

- You can make this dairy free by eliminating the sour cream sauce. It still tastes amazing!
- Can I use frozen broccoli instead? Yes you can! It might get a little soft. If you don’t love it like that then you may want to add it in (hot and ready) after the pressure cooking time is over.
- I don’t like broccoli can I use another vegetable? Sure! Try cauliflower florets, sweet corn, carrots or spinach.
