Description

An Instant Pot dish with smoked sausage, broccoli, potatoes and a creamy mustard sauce. An easy one-pot-meal!  


Ingredients

Scale
  • 1 Tbsp olive oil
  • 1 (12 oz) package beef smoked sausage
  • 1 cup diced onion
  • 1/2 cup water
  • 1 Tbsp Better than Bouillon chicken base
  • 4 red potatoes (1 1/4 pounds), cut into 1/2 inch cubes
  • 12 ounces broccoli florets
  • 1/2 cup sour cream
  • 1 Tbsp dijon mustard
  • Salt and pepper

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl it around. Add in the smoked sausage and brown for about 3 minutes. Then stir in the onions and saute for 3 minutes. 
  2. Pour in the water and scrape bottom of pot so that nothing is sticking. Turn off the Instant Pot. 
  3. Stir in the bouillon to dissolve. Dump in the potatoes and broccoli. 
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up move valve to venting and remove the lid. 
  5. In a bowl whisk together the sour cream and mustard. Stir the mixture into the pot. Salt and pepper to taste.
  6. Serve and enjoy!
