Description
An Instant Pot dish with smoked sausage, broccoli, potatoes and a creamy mustard sauce. An easy one-pot-meal!

- 1 Tbsp olive oil
- 1 (12 oz) package beef smoked sausage
- 1 cup diced onion
- 1/2 cup water
- 1 Tbsp Better than Bouillon chicken base
- 4 red potatoes (1 1/4 pounds), cut into 1/2 inch cubes
- 12 ounces broccoli florets
- 1/2 cup sour cream
- 1 Tbsp dijon mustard
- Salt and pepper
Instructions
- Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl it around. Add in the smoked sausage and brown for about 3 minutes. Then stir in the onions and saute for 3 minutes.
- Pour in the water and scrape bottom of pot so that nothing is sticking. Turn off the Instant Pot.
- Stir in the bouillon to dissolve. Dump in the potatoes and broccoli.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up move valve to venting and remove the lid.
- In a bowl whisk together the sour cream and mustard. Stir the mixture into the pot. Salt and pepper to taste.
