Instant Pot Lucky Man’s Casserole
Most dudes agree that meat and potatoes make an amazing dinner! Any guy that gets this casserole for dinner is lucky. They are going to love it. At my house we were all fighting over the small amount left in the pot at the end of the night.
The recipe is started with sliced potatoes that are quickly steamed in your Instant Pot (the BEST way to cook potatoes!). Then smoked sausage is sliced and browned for some flavor and color. The potatoes and sausage are tossed together with a favorite sauce of mine! The sauce has sour cream, mayo (just go with it!), picante sauce and cajun seasoning. I’ve been using this sauce for so many years in so many different recipes. I love it! Finally, cheese is melted on top.
This is a comforting, quick casserole that the dudes (and the gals) in your life will love. Give it a shot for dinner this week.
Ingredients/Substitution Ideas
- Russet potatoes–or red or yellow potatoes. I sliced mine into thin rounds. You can also cube your potatoes. But if you do cube them you’ll want to pressure cook for 3 minutes.
- Butter
- Beef smoked sausage–or kielbasa or andouille rope sausage
- Mayonnaise
- Sour cream
- Pace Picante sauce–I use mild. You can also use salsa.
- Milk
- Cajun seasoning–I used Smith’s brand Smidge and Spoon. Some cajun seasonings are hotter, saltier than others. Use your best judgment on the amount you use.
- Dried parsley
- Tabasco sauce–or another hot sauce
- Cheddar cheese–or colby jack
Steps
Pour 1 ½ cups water into bottom of Instant Pot. Add sliced potatoes to a steamer basket. Drop the steamer basket into the Instant Pot. I like my Avokado silicone steamer basket*.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 1 minute for paper thin potatoes or 2 minutes for cardboard thin potatoes. When time is up move valve to venting and remove the lid. Move the steamer basket out of the pot and set aside. Discard water in bottom of pot and dry out the pot.

Turn Instant Pot to saute setting. When display says HOT add in the butter and let it melt. Add in the smoked sausage slices and let them brown on each side for about 2 minutes. Turn off the pot.

In a bowl stir together the mayo, sour cream, pace picante sauce, milk, cajun seasoning, parsley and tabasco.

Add the potatoes into the Instant Pot. Gently fold in the sour cream mixture to coat the potatoes.

Sprinkle the cheese on top.

Let it melt (I used my air fryer lid for 1 minute. You can also use the keep warm setting for a few minutes).

Serve and enjoy!

Notes/Tips
- Serve with your choice of vegetables. We had lettuce cut up so we served it alongside a green salad.
- I used my Duo Crisp 6 quart Instant Pot*. You can also make this in an 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
- Variation idea: try adding in a can of corn or some frozen corn. You can also add in some green beans or another vegetable of your choice.

This is a super easy recipe and my husband loves it. I lightened it up on the fat and calories by substituting reduced fat mayo and Greek fat-free yogurt for the sour cream. Also, used turkey smoked sausage instead of beef smoked sausage. Used reduced fat cheddar for the cheese. Super tasty and taste even better as leftovers.
