Mrs. Mast’s Washday Casserole–a quick Instant Pot or slow cooker meal that brings together smoky sausage, tender potatoes, and a savory tomato-based sauce that’s finished off with spinach.

Mrs. Mast’s Washday Casserole

Today’s recipe is my adaptation of an Amish recipe. The author says, “Washday meals at Amish homes are hearty, throw together meals that can simmer for a long time with the laborious task of doing laundry is going on.” I can’t imagine how much time washing and drying clothes takes without electricity! Wow! My version of Mrs. Mast’s recipe uses the Instant Pot or slow cooker and the meal comes together very quickly. The smoked sausage flavors everything so nicely, and when it blends with the tomato sauce, garlic, and Italian seasoning, you get a luscious, savory combo. This one’s satisfying, a recipe you’ll want to keep in your back pocket for a busy night!

Ingredients/Substitution Ideas

  • Butter–or oil
  • Onion–or shallot
  • Beef smoked sausage–or kielbasa, turkey sausage
  • Beef or chicken broth–or water and Better than Bouillon
  • Russet potatoes–or red potatoes
  • Salt and pepper
  • Tomato sauce
  • Garlic powder
  • Italian seasoning
  • Spinach–fresh or frozen

Steps

Turn Instant Pot to saute setting. When display says HOT add in the butter and let it melt. Add in the smoked sausage and brown for about 3 minutes.

Then add in the onion and saute for another 3 minutes. 

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 

Add potatoes on top of sausage. Sprinkle the potatoes with a little salt and pepper.

Dump the tomato sauce over the top. Sprinkle in the garlic powder and Italian seasoning. Don’t stir.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 4 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid. 

Stir in spinach and serve topped with a little parmesan cheese.

Notes/Tips

  • Serve with crusty bread and garlic green beans or roasted carrots.
  • This recipe is gluten free and if you use oil instead of butter and forego the parmesan cheese on top it is dairy free.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Description

A quick Instant Pot or slow cooker meal that brings together smoky sausage, tender potatoes, and a savory tomato-based sauce that’s finished off with spinach.


Ingredients

Scale
  • 1 Tbsp butter
  • 1/2 cup diced onion
  • 1 (12 oz) package beef smoked sausage, sliced or diced
  • 1/2 cup beef or chicken broth
  • 16 oz Russet potatoes, peeled and cut into 1/2 inch cubes
  • Salt and pepper
  • 1 (8 oz) can tomato sauce
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1 cup chopped spinach

Instructions

Instant Pot Instructions:

  1. Turn Instant Pot to saute setting. When display says HOT add in the butter and let it melt. Add in the smoked sausage and brown for about 3 minutes. Then add in the onion and saute for another 3 minutes. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 
  3. Add potatoes on top of sausage. Sprinkle the potatoes with a little salt and pepper. Dump the tomato sauce over the top. Sprinkle in the garlic powder and Italian seasoning. Don’t stir.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 4 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid. 
  5. Stir in spinach and serve topped with a little parmesan cheese. 

Slow Cooker Instructions:

  1. Heat a pan over medium high heat. Add in the butter and let it melt. Add in the smoked sausage and brown for about 3 minutes. Then add in the onion and saute for another 3 minutes. Transfer to the slow cooker.
  2. Stir in the broth, potatoes. Sprinkle the potatoes with a little salt and pepper. Stir in the the tomato sauce, garlic powder and Italian seasoning. 
  3. Cover and cook on low for 3-4 hours or until potatoes are tender.
  4. Stir in spinach and serve topped with a little parmesan cheese. 
  • Method: Instant Pot or Slow Cooker

    Unfortunately we know EXACTLY how horrible it is to do laundry with no electricity. A few years ago we got hit with a CAT 5 hurricane, Michael. He was a bad boy. I did laundry every day for THREE WEEKS in 5 gal buckets (hubby hooked up well-water pump to the generator for a few min to fill the buckets). Had to wash the same set of jeans & shirts because he was on tractor & using chain saws all day long because we were literally buried by trees out here where we live & clothes reeked of diesel fuel & gasoline. Took him 3 days to clear from the porch to our mailbox out at the road!! I thank God every time I do laundry now. Never thought I’d love a washer & dryer as much as I do. All I can say is those Amish folks are tough cookies! Salute. This casserole looks so yummy. Will be back with stars.
