Description

A quick Instant Pot or slow cooker meal that brings together smoky sausage, tender potatoes, and a savory tomato-based sauce that’s finished off with spinach.


Ingredients

  • 1 Tbsp butter
  • 1/2 cup diced onion
  • 1 (12 oz) package beef smoked sausage, sliced or diced
  • 1/2 cup beef or chicken broth
  • 16 oz Russet potatoes, peeled and cut into 1/2 inch cubes
  • Salt and pepper
  • 1 (8 oz) can tomato sauce
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1 cup chopped spinach

Instructions

Instant Pot Instructions:

  1. Turn Instant Pot to saute setting. When display says HOT add in the butter and let it melt. Add in the smoked sausage and brown for about 3 minutes. Then add in the onion and saute for another 3 minutes. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 
  3. Add potatoes on top of sausage. Sprinkle the potatoes with a little salt and pepper. Dump the tomato sauce over the top. Sprinkle in the garlic powder and Italian seasoning. Don’t stir.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 4 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid. 
  5. Stir in spinach and serve topped with a little parmesan cheese. 

Slow Cooker Instructions:

  1. Heat a pan over medium high heat. Add in the butter and let it melt. Add in the smoked sausage and brown for about 3 minutes. Then add in the onion and saute for another 3 minutes. Transfer to the slow cooker.
  2. Stir in the broth, potatoes. Sprinkle the potatoes with a little salt and pepper. Stir in the the tomato sauce, garlic powder and Italian seasoning. 
  3. Cover and cook on low for 3-4 hours or until potatoes are tender.
  4. Stir in spinach and serve topped with a little parmesan cheese.
