Description
A quick Instant Pot or slow cooker meal that brings together smoky sausage, tender potatoes, and a savory tomato-based sauce that’s finished off with spinach.
Ingredients

- 1 Tbsp butter
- 1/2 cup diced onion
- 1 (12 oz) package beef smoked sausage, sliced or diced
- 1/2 cup beef or chicken broth
- 16 oz Russet potatoes, peeled and cut into 1/2 inch cubes
- Salt and pepper
- 1 (8 oz) can tomato sauce
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- 1 cup chopped spinach
Instructions
Instant Pot Instructions:
- Turn Instant Pot to saute setting. When display says HOT add in the butter and let it melt. Add in the smoked sausage and brown for about 3 minutes. Then add in the onion and saute for another 3 minutes.
- Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Add potatoes on top of sausage. Sprinkle the potatoes with a little salt and pepper. Dump the tomato sauce over the top. Sprinkle in the garlic powder and Italian seasoning. Don’t stir.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 4 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
- Stir in spinach and serve topped with a little parmesan cheese.
Slow Cooker Instructions:
- Heat a pan over medium high heat. Add in the butter and let it melt. Add in the smoked sausage and brown for about 3 minutes. Then add in the onion and saute for another 3 minutes. Transfer to the slow cooker.
- Stir in the broth, potatoes. Sprinkle the potatoes with a little salt and pepper. Stir in the the tomato sauce, garlic powder and Italian seasoning.
- Cover and cook on low for 3-4 hours or until potatoes are tender.
- Stir in spinach and serve topped with a little parmesan cheese.
