Instant Pot Lazy Mom Chicken–tender chicken with tomatoes, potatoes, zucchini and goat cheese. A fast and easy dump and go dinner.

Instant Pot Lazy Mom Chicken
This is an easy summer dump and go one pot meal! Perfect for a day when you don’t have much energy to put together a dinner (like today…anybody else feeling tired after a late night last night?).
The flavors are delicious and light. I love the use of the goat cheese to bring in a bit of buttery tartness. Of course if you don’t like goat cheese you can try feta or even some mozzarella.
I love using rotisserie chicken from Costco for recipes like this one. I buy two chickens each time I go and then freeze the meat in 2-3 cups increments. It’s perfectly tender and flavorful.
Ingredients/Substitution Ideas
- Better than Bouillon Chicken Base
- Cooked chopped chicken–I used rotisserie chicken. You can also use cubes of raw chicken breast or thighs.
- Russet potatoes–or red potatoes
- Canned diced tomatoes–or fire roasted tomatoes
- Kosher salt
- Black pepper
- Garlic powder
- Italian seasoning
- Onion powder
- Zucchini
- Goat cheese–or feta cheese or a half cup of shredded mozzarella cheese
- Cornstarch–optional
Steps
Pour water into Instant Pot. Stir in the chicken base.
Dump in the chicken, potatoes, tomatoes, salt, pepper, garlic powder, Italian seasoning and onion powder. Don’t stir.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 2 minutes. When time is up move valve to venting and remove the lid.

Stir in the zucchini. Replace the lid. Let the pot sit on warm for 10 minutes (this will slightly cook the zucchini).

Stir in the goat cheese. If you’d like to thicken the sauce you can make a cornstarch slurry by stirring together equal parts cornstarch and water and stirring it into the pot using the saute setting.
Serve and enjoy!

Notes/Tips
- Serve with a side of cornbread or french bread with butter.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- This recipe is gluten free (just make sure the chicken base you use is gluten free).
- Store leftovers in an airtight container* in the refrigerator for up to 5 days.

Description

Ingredients
- 1/2 cup water
- 1 Tbsp Better than Bouillon Chicken Base
- 2–3 cups cooked chopped chicken (I used rotisserie chicken)

- 1 (14.5 oz) can diced tomatoes
- 1 tsp kosher salt
- 1 tsp black pepper
- 1 1/2 tsp garlic powder

- 1 medium zucchini, peeled and seeded and cut into 1/4 inch cubes
- 1 ounce goat cheese or feta cheese
- 2 tsp cornstarch (optional)
Instructions

I made Lazy Mom Chicken and It was so delicious I could not stop eating 😋. I halved the potato and doubled the zucchini to cut calories and carbs. I put in 1/2 onion in place of onion powder and added 1/2 yellow bell pepper. Didn’t have rotisserie chicken so I used raw thighs and increased cooking time. I LOVE all your recipes.
