Instant Pot Lazy Mom Lasagna–an easy recipe for a layered pasta, meat, cheese and marinara sauce meal that comes together in just a few minutes. No browning, no sautéing and no boiling! You can make this in the Instant Pot or slow cooker.

Instant Pot Lazy Mom Lasagna

If you’re a lazy mom (or dad) like me this is a perfect weeknight meal idea! This is such a great way to make “lasagna.” Frozen ravioli is used in the place of noodles and instead of browning ground beef or ground sausage you use smoked sausage. Layer all the ingredients in a deep pot-in-pot dish and pressure cook for 25 minutes. This is a perfect recipe to make in the summer when you don’t want to heat up your house to bake a lasagna! No oven, no stove! You can also make this in the Crockpot instead of the Instant Pot.

This recipe makes 6 hearty servings. The leftovers can be refrigerated for up to 5 days. Or you can freeze in an airtight container for up to 3 months.

Try using different types of smoked sausage. Or you can brown ground Italian sausage in the place of smoked sausage. Try your favorite pasta sauce. I used Classico brand. You can also use frozen tortellini in the place of raviolis. I always find the frozen ravioli in the grocery store by the frozen breads.

Pro tip: Use the 3 quart Instant Pot liner* inside your 6 or 8 quart Instant Pot liner for pot-in-pot cooking.

Description

An easy recipe for a layered pasta, meat, cheese and marinara sauce meal that comes together in just a few minutes. No browning, no sautéing and no boiling! You can make this in the Instant Pot or slow cooker.


Ingredients

Scale
  • 1 (12 oz) package Aidells Italian Style Smoked Chicken Sausage (or any type of smoked sausage)
  • 1 cup ricotta cheese (or cottage cheese)
  • 1 egg
  • 1 tsp parsley
  • 1/4 cup fresh basil, chopped
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 (24 oz) jar Classico Tomato and Basil Sauce (or any other marinara sauce)
  • 1 (24 oz) bag frozen ravioli
  • 1 cup shredded mozzarella cheese

Instructions

Instant Pot Instructions:

  1. Slice the sausage into quarter inch slices. 
  2. In a bowl mix together the ricotta, egg, parsley, basil, onion powder and garlic powder. 
  3. In a deep pot in pot dish (I used a 3 quart liner* inside a 6 quart liner) layer 1/3 of the marinara, ravioli, sausage, ricotta. Repeat 2 more times. Sprinkle the mozzarella cheese over the top. 
  4. Pour 1 ½ cups water into Instant Pot. Place lasagna dish on top of a trivet/sling* and lower into the Instant Pot. 
  5. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 25 minutes. When time is up let pot sit for 5 minutes and then move valve to venting and remove the lid. 
  6. Remove the dish and sprinkle with more basil and serve. 

Slow Cooker Instructions:

  1. Slice the sausage into quarter inch slices. 
  2. In a bowl mix together the ricotta, egg, parsley, basil, onion powder and garlic powder. 
  3. In the bottom of the slow cooker, layer 1/3 of the marinara, ravioli, sausage, ricotta. Repeat 2 more times. Sprinkle the mozzarella cheese over the top. 
  4. Cover and cook on high for 3 hours or on low for 4-6 hours.
  5. Sprinkle with more basil and serve.

    OMG, this may be the yummiest meal I’ve ever made!!! Used refrigerated spinach and ricotta ravioli, Bertolli marinara. Had ground beef and italian sausage on hand. Used 8″ spring form pan in large Ninja Foodi pressure cooker. Browned the mozz cheese under the broiler. So incredibly good!!

    Love your recipes. Always very flavorful, never blah! You know your herbs and spices.

    There are many chicken and turkey sausages that are fully cooked that would work great for this and other recipes. I’ll have to wait to buy a liner to try this…sounds great!

    Wondering i f you can add ground meat to this. I’m guessing you would have to cook the ground meat first.

    This is FABULOUS! I used smoked turkey sausage and we loved this so much. Do you have any other recipes that use the 3 qt. IP liner? I bought it specifically for this recipe and while it was worth the purchase just for this recipe, if you have more, I’d love them.
