Instant Pot Lazy Girl’s Enchilada Casserole—for those days that you just don’t want to make dinner! Try this flavorful, fast and easy enchilada casserole with smoked sausage, salsa, green chiles, tortillas and pepper jack cheese.

Instant Pot Lazy Girl’s Enchilada Casserole

You’re going to love this easy enchilada dish! It has so much flavor. I love the little pops of sweetness from the corn. It’s also really fast and easy to make. With the use of smoked sausage you don’t have to pre-cook any meat. This dish can be made in pot-in-pot in your Instant Pot or in your Crockpot or oven.

Ingredients/Substitution Ideas

  • Turkey or chicken smoked sausage–or any other smoked sausage you like
  • Red enchilada sauce–or green enchilada sauce
  • Sour cream–or plain sour cream
  • Diced green chiles–I used mild
  • Frozen sweet corn–or drained canned corn
  • Salsa–or Pace’s picante sauce
  • White corn tortillas–or yellow corn tortillas or flour tortillas
  • Pepper jack cheese–or Mexican blend cheese
  • Cheddar cheese–or Mexican blend cheese

Steps

  • Slice the smoked sausage lengthwise and then slice into quarter inch pieces widthwise.
  • In a pot-in-pot dish add the enchilada sauce, sour cream, green chiles, corn, salsa and smoked sausage. Stir.
  • Cut the tortillas into 1 inch squares. Fold them into the dish.
     
  • Sprinkle both types of cheeses on top. 
  • Cover the dish with foil. Pour 1 ½ cups water into bottom of Instant Pot. Place the dish on a sling and lower into the Instant Pot. 
  • Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 25 minutes. When time is up move valve to venting and remove lid. Remove the dish from the Instant Pot. 
  • Serve and enjoy!

Notes/Tips

  • I used my 6 quart Instant Pot Duo 60 7 in 1*.
  • For my pot-in-pot dish I used a 7 inch by 4 inch Fat Daddios Cake pan*.
  • I love using my OXO sling* for pot-in-pot cooking.
  • Don’t want to use smoked sausage? You can also use cooked and seasoned chicken or ground beef.
  • Use whatever type of tortillas you like best. They do get soggy so this dish is best the first day. You’ll need about 255 grams of tortillas. So if you don’t buy the street taco size you can just weigh them out on a digital scale*.
  • This recipe can be gluten-free. Just check labels for gluten-free varieties.

For those days that you just don’t want to make dinner! Try this flavorful, fast and easy enchilada casserole with smoked sausage, salsa, green chiles, tortillas and pepper jack cheese. 


Ingredients

Scale
  • 1 (12 oz) package turkey or chicken smoked sausage
  • 1 (10 oz) can red enchilada sauce
  • 1 cup sour cream
  • 1 (4 oz) can diced green chiles
  • 1 cup frozen sweet corn
  • 1/2 cup salsa
  • 10 (255 grams) white or yellow corn tortillas (street taco size)
  • 1/2 cup shredded pepper jack cheese
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Slice the smoked sausage lengthwise and then slice into quarter inch pieces widthwise.
  2. In a pot-in-pot dish add the enchilada sauce, sour cream, green chiles, corn, salsa and smoked sausage. Stir well.

  4. Sprinkle both types of cheeses on top.

Slow Cooker Instructions:

  1. Slice the smoked sausage lengthwise and then slice into quarter inch pieces widthwise.
  2. Add the enchilada sauce, sour cream, green chiles, corn, salsa and smoked sausage into slow cooker and stir.
  3. Cover and cook on high for 2 hours.
  4. Cut the tortillas into 1 inch squares. Fold them into the dish. 
  5. Sprinkle both types of cheeses on top. 
  6. Cover and cook on high for 20 more minutes.
  7. Serve and enjoy!

Oven Instructions:

  1. Heat oven to 350° F.
  2. Slice the smoked sausage lengthwise and then slice into quarter inch pieces widthwise.
  3. Add the enchilada sauce, sour cream, green chiles, corn, salsa and smoked sausage into a large bowl and stir well. 
  4. Cut the tortillas into 1 inch squares. Fold them into the dish.
  5. Scrape the mixture into a 9×13 inch baking dish. 
  6. Sprinkle both types of cheeses on top. 
  7. Bake for 30 minutes. 
  8. Serve and enjoy!

    Can I use greek yogurt in place of sour cream? Forgot to buy ! Flavor would be different, but I’m hoping it would add the creaminess. Or leave out and add a dollop on top?

    This was fantastic and crazy easy to make. I love my Instant Pot but used the oven method for this because I wanted the crispy bits on the tortillas and cheese… and then divided into 2 pans so we could have it for 2 nights. In the future if I make it ahead, I’ll mix everything together except the tortillas (and cheese topping), then add the tortillas and cheese topping right before baking the next day. This is a new favorite!

    Does it have to be pot in pot in the instapot? Or can you put everything in the instapot and cook?

      It doesn’t have the thin liquid required to bring the pot to pressure so it would burn. You could use the slow cooker setting though and cook for a couple of hours.
