Diana’s Chicken Casserole–an easy slow cooker chicken and potato recipe made with tender chicken thighs, Yukon gold potatoes, mushrooms, garlic, balsamic vinegar and a creamy savory sauce.

Diana’s Chicken Casserole

This dump-and-go Crockpot recipe is perfect for a busy day. I love that it’s a one-pot meal so you don’t need to worry about making extra sides. There’s no browning or sauteing required which means fewer dishes to wash later. Chicken thighs work well in the slow cooker because they stay tender and flavorful. The combination of tomato paste, Worcestershire sauce and balsamic vinegar gives the sauce a rich flavor that tastes way fancier than you’d expect from normal, pantry ingredients. If you like peas, stir in about a half cup of frozen peas at the end for a little extra color and sweetness. If you have leftovers they make a perfect lunch the next day too.

Ingredients/Substitution Ideas

  • Mushrooms–I used white button
  • Yukon gold potatoes–or red potatoes, peeled Russets
  • Boneless skinless chicken thighs–or chicken tenderloins
  • Kosher salt
  • Black pepper
  • Dried onion–or ½ cup finely diced fresh onion
  • Garlic cloves–or jarred minced garlic
  • Cornstarch–or flour
  • Olive oil–or avocado oil
  • Tomato paste
  • Worcestershire sauce–or steak sauce
  • Balsamic vinegar–or red wine vinegar
  • Water
  • Better than Bouillon chicken base
  • Heavy cream–or half and half

Steps

Add mushrooms, potatoes, chicken, salt, pepper, onion, garlic, cornstarch, olive oil, tomato paste, Worcestershire sauce, vinegar, water and better than bouillon into slow cooker and stir well.

Cover and cook on low for 3 hours. 

Stir in cream, Salt to taste. Serve and enjoy!

Notes/Tips

  • Serve with a green salad, roasted broccoli, green beans or crusty bread.
  • This recipe can be gluten free if you use gluten-free Worcestershire sauce.
  • I used my 6 quart Ninja slow cooker. Cooking on low for 3 hours should work if your slow cooker runs a little hot and the chicken/potatoes are cut small. In some slower crockpots it may take closer to 4 hours for the potatoes to become fully tender.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days. You can freeze leftovers, although the potatoes may soften a bit after thawing.
  • Other recipes you can make with balsamic vinegar are Jonny’s American Goulash and Mrs. Watson’s Wiggle.

Description

An easy slow cooker chicken and potato recipe made with tender chicken thighs, Yukon gold potatoes, mushrooms, garlic, balsamic vinegar and a creamy savory sauce.


Ingredients

Scale
  • 4 oz quartered mushrooms
  • 20 oz yukon gold potatoes, cut into 1 inch cubes
  • 16 oz boneless skinless chicken thighs, cut into 2 inch chunks
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 2 Tbsp dried onion
  • 4 garlic cloves, minced
  • 1 Tbsp cornstarch
  • 1 Tbsp olive oil
  • 2 Tbsp tomato paste
  • 1 Tbsp worcestershire sauce
  • 1 Tbsp balsamic vinegar
  • 1/2 cup water
  • 1 tsp Better than Bouillon chicken base
  • 1/4 cup heavy cream or half and half

Instructions

  1. Add mushrooms, potatoes, chicken, salt, pepper, onion, garlic, cornstarch, olive oil, tomato paste, Worcestershire sauce, vinegar, water and better than bouillon into slow cooker and stir well.
  2. Cover and cook on low for 3 hours. 
  3. Stir in cream, Salt to taste. Serve and enjoy!
