Brad’s Mom’s Casserole–an easy make-ahead breakfast recipe with savory sausage, eggs, bread and cheddar cheese that’s perfect for holidays, weekends or busy mornings.

Brad’s Mom’s Casserole

This recipe is adapted from Brad’s Mom’s Breakfast Casserole on Food.com. The author states, “This is Brad Pitt’s Mom’s recipe and is supposedly one of his favorite dishes. This needs to be made the night before and refrigerated overnight, which means you can’t exactly whip this up if Brad drops in unexpectedly!” Haha! We shared this with our friend and he told Greg, “now I know why you run so many miles each day…because your wife is an amazing cook!” Lol.

Ingredients/Substitution Ideas

  • Breakfast sausage–I used Jimmy Dean brand
  • Eggs
  • Milk–or half and half, evaporated milk
  • Dried mustard
  • Kosher salt
  • Black pepper
  • Bread cubes–French bread, hoagie buns, sour dough or sandwich bread all work. Try using stale bread or crusts.
  • Cheddar cheese–or Monterey Jack, Colby Jack, or pepper jack

Steps

Heat a pan over medium high heat. Add in the sausage and brown. Drain off excess grease. Turn off the heat.

In a bowl whisk together the eggs, milk, mustard, salt and pepper. 

Spray a 9×13 inch pan with non-stick cooking spray. Spread the bread cubes in the bottom of the pan. Layer the sausage on top. Pour the egg mixture over everything. Sprinkle with the cheese.

Cover with foil and refrigerate overnight. Bake at 350° F for 40 minutes. Slice and serve.

Notes/Tips

  • Serve with yogurt, fresh fruit or orange juice.
  • Stale or day-old bread works best because it absorbs the egg mixture well. If your bread cubes are fresh and soft, leave them out on a baking sheet for a few hours before assembling the casserole.
  • You can assemble this casserole up to 24 hours ahead of time.
  • For extra flavor, try adding diced green onions, bell peppers or cooked mushrooms.
  • Store leftovers in an airtight container* in the refrigerator for up to 3-4 days. Reheat individual portions in the microwave for an easy breakfast during the week. You can freeze baked portions tightly wrapped for up to 2 months.

Description

Ingredients

Scale
  • 16 oz breakfast sausage
  • 6 eggs
  • 1 1/2 cups milk
  • 1 tsp dried mustard
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 2 1/2 cups cubed bread (stale works well)
  • 1 cup shredded cheddar

Instructions

Stove and Oven:

  1. Heat a pan over medium high heat. Add in the sausage and brown. Drain off excess grease. Turn off the heat.
  2. In a bowl whisk together the eggs, milk, mustard, salt and pepper. 
  3. Spray a 9×13 inch pan with non-stick cooking spray. Spread the bread cubes in the bottom of the pan. Layer the sausage on top. Pour the egg mixture over everything. Sprinkle with the cheese.
  4. Cover with foil and refrigerate overnight. 
  5. Bake covered for 30 minutes, then uncover and bake an additional 10 minutes until the center is set and the cheese is lightly golden.
  6. Slice and serve. 

Slow Cooker:

  1. Heat a pan over medium high heat. Add in the sausage and brown. Drain off excess grease. Turn off the heat.
  2. In a bowl whisk together the eggs, milk, mustard, salt and pepper. 
  3. Spray a slow cooker with non-stick cooking spray. Spread the bread cubes in the bottom of the slow cooker. Layer the sausage on top. Pour the egg mixture over everything. Sprinkle with the cheese.
  4. Cover and cook on high for 2 hours, or until center is set. 
  5. Slice and serve.
