Easy Greek Gyro Casserole–flavorful Instant Pot dinner made with seasoned ground lamb, basmati rice, zucchini, feta and Greek yogurt for an easy Mediterranean-inspired meal.

Easy Greek Gyro Casserole

Easy Greek Gyro Casserole

Today’s recipe is a fun change up with ground lamb, feta cheese and a Greek flare. I like how it’s a one pot meal with veg, rice and meat all in one pot. If you don’t have access to lamb you can always use ground beef or ground chicken. And feel free to add in some kalamata olives and some fresh lemon juice to make it even more Greek tasting. Enjoy! This recipe is adapted from Easy Greek Gyro Skillet on Lemons for Lulu.

Ingredients/Substitution Ideas

  • Ground lamb–or ground beef
  • Onion–or shallot
  • Garlic cloves–or jarred minced garlic
  • Kosher salt
  • Black pepper
  • Garlic powder
  • Dried oregano
  • Dried basil
  • Dried dill
  • Chicken broth–or water and Better than Bouillon chicken base
  • Basmati rice–or jasmine rice, long grain rice
  • Zucchini
  • Diced fresh tomatoes
  • Feta cheese–or goat cheese
  • Plain Greek yogurt

Steps

Turn Instant Pot to saute setting. When display says HOT add in the lamb and break it up. Add in the onion. Brown for 5 minutes. Stir in the garlic, salt, pepper, garlic powder, oregano, basil and dill.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Sprinkle in the rice and press gently to submerge. 

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 5 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.

Stir in the zucchini, tomatoes, feta and greek yogurt. Salt and pepper to taste. Serve and enjoy!

Notes/Tips

  • This is delicious served with pita bread or cucumber salad. If you love kalamata olives add some in!
  • For extra Mediterranean flavor add a squeeze of fresh lemon juice before serving.
  • I used my 4 quart Instant Pot*. You can also make this in a 6 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days. You can freeze portions for up to 2 months, although the yogurt may separate slightly after thawing.

Ingredients

  • 16 oz ground lamb
  • 1 small onion, diced
  • 4 garlic cloves, minced
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder

  • 1 cup basmati rice
