Instant Pot Smoked Sausage, Green Beans and Potatoes
My cajun version of this recipe is so popular and so tasty I decided to make another version that’s basic and doesn’t have the cajun spice. What resulted was a most amazing dinner with very little effort or ingredients.
Start by cubing up some potatoes. I used yellow yukon gold potatoes but it doesn’t really matter what kind you use. You can use red potatoes or Russets as well. You can peel them or not. I didn’t peel mine. Then wash and trim some fresh green beans. For sake of ease, buy a bag of fresh green beans that has been washed and trimmed already. That’s what I did. I have not tried this recipe with frozen green beans. I believe that they would come out a little too mushy. But you can try it if you want! Finally take a package of smoked sausage and slice it into quarter inch slices. Smoked sausage can be found by the other cured meats at the grocery store. It is pre-cooked and doesn’t require you to brown it. It comes in many different flavors and options. I chose a beef smoked sausage.
Then all you do is add a little water into the Instant Pot followed by your prepared ingredients and then sprinkle in pepper, seasoned salt, garlic powder and finally top with a little butter.
You’ll only use a pressure cook time of 1 minute(!) for this recipe. The reason? The pot takes a while to come to pressure and is cooking the potatoes and green beans the whole time. One minute is definitely enough time for the food to cook through, I promise!
I can’t wait to make this one again really soon! We all ate it until it was gone. No leftovers at all!

What Pressure Cooker Did You Use?
To make Instant Pot Smoked Sausage, Green Beans and Potatoes I used my 6 quart Instant Pot Duo 60 7 in 1*. I love this Instant Pot because it has the yogurt making function which I use almost weekly. It has two pressure settings (high and low), and there are also little slots in the handles so that you can rest the lid there instead of putting it down on your counter-top.

Description
The easiest meal with the most amazing results. Smoked sausage, fresh green beans, cubed potatoes and a couple of seasonings are cooked together quickly in your electric pressure cooker for an easy one pot, dump and press start meal.
Ingredients
- 1 cup water
- 1 (12 oz) package of pre-cooked smoked sausage, sliced into quarter in pieces
- 1 1/2 pounds yellow, red or Russet potatoes, washed and cubed
- 1 pound fresh green beans, washed and trimmed
- 1 tsp black pepper
- 2 tsp seasoned salt
- 1 tsp garlic powder
- 4 Tbsp butter, cut into 8 pieces
Instructions
- Pour the water into the bottom of the Instant Pot. Layer ⅓ of the sausage, ⅓ of the potatoes and ⅓ of the green beans. Repeat 2 more times.
- Sprinkle in the pepper, seasoned salt and garlic powder. Add in the butter pieces on top.
- Cover the pot and secure the lid. Make sure the valve is set to sealing. Set the manual/pressure cook button to 1 minute. When the time is up let the pot sit for 3-5 minutes and then move the valve to venting. Remove the lid.
- Gently stir. Scoop onto serving plates and enjoy.
Notes
You can use frozen green beans in the place of fresh.

While I’ve had my IP Duo 6-qt 7-in-1 for over a year now, the only thing I’d made in it was spaghetti since I can throw in frozen ground beef and it still is all done in half the time. Smoked sausage, green beans, and taters is definitely a Midwestern staple (I’m from Indiana here) and while my mother used to make this separately from each other, I first tried it in one pot when I was 18 at a friend’s house. I was sold on the ingredients needing to be cooked together for that tasty outcome. Tonight was the first time I made something other than spaghetti in my IP and I couldn’t believe how easy it was to throw these ingredients together and have dinner ready in less than 10 minutes. Usually I slow cook this all day because of the potatoes, but this didn’t take long at all. We’re bracing for the winter storm tonight, so I wanted a quick meal to fill everyone up and keep our bellies full so we can sleep through this craziness. Made this tonight and really loved it! It finished with quite a bit of liquid, so I put it on saute for a little bit and stirred.
– I ran out of seasoned salt, so I used salt, onion powder, and some paprika
– I used turkey kielbasa and it was great
– I used a can of green beans and just stirred them in at the end halfway through that final sautee
– 1 tsp of black pepper was a bit much for us. I think I’ll half it next time

I usually make the Cajun version, but my wife doesn’t like the heat, so I substituted Kielbasa, and went with canned green beans, since that’s what I had. Went with 3 min, and a 6 min NR since I got busy, and it still turned out just fine. This is one of my favorite dishes, even without the Andouille sausage. Who knew such a simple, quick recipe could be so flavorful?

I’ve made this dish multiple times and am doing it again tonight! It’s excellent, and so so easy. We love it! I use fresh green beans, red potatoes, unpeeled, and Kielbasa. I’ve also used Andouille sausage, but even though the Kielbasa makes it a bit more “greasy” than Andouille does, IMO it gives the dish a much better flavor, overall, however, it’s a matter of personal taste. It’s great either way.

I made this one today though I halved it. I needed to use up some leftover Andouille that I had from something I made yesterday so to make up for the missing meat I added a small bag of chicken strips to it and they made up the volume just fine! Leftover deer sausage in the fridge, a bag of new potatoes I needed to use, and then my sister dropped off a bag of freshly picked green beans. A Pinterest click later and mmm mmm goodness followed! I just had to tell you how much we loooooove this recipe! I’ve shared it with everyone I know who has an instant pot. I usually add a little more chicken broth because we like it saucy/stew-y, and the liquid gets so flavorful. One other fun adaptation — I’ve made this substituting about a pound of chopped collard greens for the green beans — basically you just stuff as many collard greens into the pot as you can, since they cook down so much. My husband said he might like it even more with the greens!

I’ve made this recipe a couple of times and really like it. Plus it has passed the “wife” test, so kudos there. The last time I made this I used sweet potatoes instead of regular potatoes and it came out great as well. The sweet potatoes seem to add an extra flavor level to an already great recipe.

Potatoes, sausage and green beans are some of my favorite foods, so I was dying to try this. Oh my goodness, SOOOOOOOOOOOOOOOOOO GOOD!!! My husband followed the instructions exactly, except I did add probably a quarter pound more potatoes and the bag of green beans I had was 1.75 pounds. He did 5 minutes for the release, I would say 4 would have been better, the potatoes and green beans were just a little overdone, but really not even bad- if you like your veggies soft 5 is perfect. I am so happy about this recipe but sad to admit that my husband and I ate the entire thing tonight just the two of us LOL. You won’t be sorry!!!

I would throw it in there frozen all in one piece with the potatoes and then slice it up after it has cooked. Or thaw it in the microwave. add in the canned beans after the pressure cooking time is up.

Can you believe you cook it for 1 minute? Well, it is actually more because you allow it to come under pressure and you wait for 5 min to release so you get a little more cook time.
The red potatoes were perfect, the fresh beans were perfect and the Kielbasa was yummy but it is precooked so all it has to do is warm up. My husband likes to dip the sausage in a little pool of hot mustard.

I used frozen green beans, the little thin whole ones, which are the only frozen green beans I will eat. I didn’t go looking for fresh in the middle of winter. After reading the comments, I decided on 2 minutes because my husband has problem with his dentures (despite getting new ones!) and likes everything pretty tender. I could have done 1, I think, but nothing was mushy. I also used some Herbox sodium free chicken bouillon instead of water, and added some mushrooms. It was very good. I reduced the amount of everything since there are only 2 of us. It’s a keeper.

Is the 1 minute time correct? I used my 6 qt IP for this recipe and after 1 minute the potatoes were still hard and the green beans uncooked. Both the potatoes and green beans were fresh, not old. All together I had to cook for about 24 minutes to get the potatoes soft.

I would not pressure cook the canned beans. I would just stir them in after the potatoes have pressure cooked. Otherwise I think they’ll be completely unidentifiable

Hi Karen, Love your recipes. I personally do canned green beans & cubed potatoes in my Mini 3qt ALL the time, 1 cup of Chicken Better than Bouillon broth @ 4min then quick release & beans are not mushy at all. Hubby can’t get enough of them! Will definitely be adding the sausage soon.

I created this recipe myself in a big skillet for my big family 20 years ago before there was an Instant Pot available with just a couple of changes that really add flavor: EV Olive oil instead of butter, 1t. powdered chicken bouillion, and a lot of onion powder and generous black pepper. Frozen green beans work just fine though I too prefer fresh. Smaller cubes on the potoes work best because you want them to “melt” somewhat, which adds a lot to the dish. My method could be done in the IP, but you’d do just the potatoes first for a minute in a bit of water so that they are crisp tender, then add green beans and sausage after that and do for min longer, which will allow the potatoes to melt a bit in the mixture. This is a real family favorite!
