Instant Pot Cajun Chicken Tetrazzini
I’m a big fan of chicken tetrazzini. It was one of our go to dinners when I was growing up. These days I am loving cajun chicken tetrazzini. It’s a creamy spaghetti dish with chicken, cajun seasoning and cajun sausage. It does have a bit of spice from the sausage and seasoning but nothing too crazy.
This recipe comes together very fast. The use of rotisserie chicken makes it especially quick. Every time I go to Costco I pick up two rotisserie chickens ($4.99 a piece!). Then I remove the meat from the bones and pack 2-3 cups in each ziplock bag. I then throw the bags in the freezer. Whenever I need cooked chicken for a recipe I have it ready to go! If you don’t have a Costco by you then I recommend making this basic shredded chicken recipe and freezing it in bags as well.

Ingredients/Substitution Ideas
- Olive oil
- Smoked andouille sausage–you can also use kielbasa or beef smoked sausage
- Chicken broth–or water and Better than Bouillon Chicken Base
- Spaghetti–you can also use another pasta like cavatappi or penne pasta
- Chopped, cooked chicken–I used rotisserie chicken
- Cajun seasoning–I used Smith’s brand Smidge and Spoon
- Campbells Cream of Chicken Soup with Herbs
- Parmesan cheese
Steps
- Brown the sausage: Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl it around. Add in the sausage and let it brown for a couple minutes on each side.
- Deglaze the pot: Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Add noodles: Break the spaghetti noodles in half and lay them in a criss cross pattern in the pot.
- Layer on other ingredients: Dump chicken, cajun seasoning and cream of chicken soup on top of the pasta. Don’t stir.
- Pressure cook: Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
- Serve: Stir well. Sprinkle the parmesan cheese on top and let it melt. Scoop onto plates and serve.
Notes/Tips
- Serve with a green salad or roasted broccoli.
- I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot.
- This recipe makes a lot (about 8-10 servings)! You can easily halve this recipe by cutting all the ingredients in half and then keeping the cooking time the same.
- Different cajun seasonings have different levels of heat and different levels of salt. You may want to use less than the recommended amount in the recipe and add more to taste.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

What extra seasoning do I add when I use original “plain” cream of chicken soup?
Maybe some poultry seasoning and a little extra salt and pepper
