Description
Spaghetti with chicken and andouille cajun sausage in a creamy sauce. It’s like chicken tetrazzini meets cajun chicken pasta!
Ingredients

- 1 Tbsp olive oil
- 1 (12 oz) package smoked andouille sausage, sliced into quarter inch rounds
- 4 cups chicken broth
- 1 (16 oz) package spaghetti
- 2 cups chopped, cooked chicken (I used rotisserie chicken)
- 1 Tbsp cajun seasoning
- 1 (10.5 oz) can Campbells Cream of Chicken Soup with Herbs
- 1/2 cup shredded parmesan cheese
Instructions
- Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl it around. Add in the sausage and let it brown for a couple minutes on each side.
- Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Break the spaghetti noodles in half and lay them in a criss cross pattern in the pot.
- Dump chicken, cajun seasoning and cream of chicken soup on top of the pasta. Don’t stir.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
- Stir well. Sprinkle the parmesan cheese on top and let it melt. Scoop onto plates and serve.
