Dolly Parton’s Ground Beef Casserole–an easy Instant Pot or slow cooker dinner made with ground beef, potatoes, corn, tomatoes and melty mozzarella cheese.

Dolly Parton’s Ground Beef Casserole

I’ve seen quite a few versions of Dolly’s 5 layer casserole and I decided to make my own version that you can make in the Instant Pot or slow cooker. I amped up my version with seasonings and Worcestershire sauce along with a can of green chiles. The results were very flavorful! Dolly wins again! Enjoy! (This recipe is adapted from Dolly Parton’s 5-Layer Dinner in the Instant Pot on Margin Making Mom).

Ingredients/Substitution Ideas

  • Lean ground beef–or ground turkey
  • Onion–or shallot or frozen diced onion
  • Montreal steak seasoning–or your favorite all-purpose steak seasoning
  • Garlic powder–or 2-3 cloves fresh minced garlic
  • Italian seasoning
  • Worcestershire sauce
  • Beef broth–or chicken broth or vegetable broth
  • Russet potatoes–or Yukon Gold potatoes
  • Petite diced tomatoes–or regular diced tomatoes
  • Diced green chiles–or one green bell pepper, cored and diced
  • Canned corn–or frozen corn
  • Cornstarch
  • Mozzarella cheese–or cheddar

Steps

Turn Instant Pot to sauté setting. When display says HOT add in the beef and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease. Stir in 1 tsp of the steak seasoning, garlic powder, Italian seasoning and Worcestershire sauce. 

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 

Add in the potatoes. Sprinkle them with the remaining 1 tsp of steak seasoning. Then add in the tomatoes, green chiles and corn.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 3 minutes. When time is up move valve to venting and remove the lid. 

In a small bowl stir together cornstarch with 1 Tbsp of cold water. Turn Instant Pot to saute setting and stir the slurry into the pot to thicken the sauce. Once thickened turn off Instant Pot.

Stir in the mozzarella. 

Serve and enjoy!

Notes/Tips

  • Serve with green salad or fruit salad.
  • This recipe can be gluten free if you use gluten free Worcestershire sauce.
  • I used my pink 4 quart Instant Pot*. You can also make this in an 6 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for 4 days. Freeze leftovers for up to 3 months.

An easy Instant Pot or slow cooker dinner made with ground beef, potatoes, corn, tomatoes and melty mozzarella cheese.


Ingredients

Scale
  • 16 oz lean ground beef
  • 1 small onion, halved and sliced
  • 2 tsp Montreal steak seasoning, divided
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 2 tsp Worcestershire sauce
  • 1/2 cup beef broth
  • 2 large Russet potatoes, peeled and cut into cubes
  • 1 (14.5 oz) can petite diced tomatoes
  • 1 (4 oz) can diced green chiles
  • 1 (15.25 oz) can corn, drained
  • 1 Tbsp cornstarch
  • 1 cup shredded mozzarella cheese

Instructions

Instant Pot Instructions:

  6. Stir in the mozzarella.

Slow Cooker Instructions:

  1. Heat a pan over medium high heat. Add in the beef and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease. Stir in 1 tsp of the steak seasoning, garlic powder, Italian seasoning and Worcestershire sauce. Transfer to the slow cooker
  2. Stir in the broth and potatoes. Sprinkle potatoes with the remaining 1 tsp of steak seasoning. Then add in the tomatoes, green chiles and corn.
  3. Cover and cook on low for 3-4 hours.
  4. In a small bowl stir together cornstarch with 1 Tbsp of cold water. Stir the slurry into the slow cooker to thicken the sauce. Let cook without the lid on high for 10 minutes. 
  5. Stir in the mozzarella. 
  6. Serve and enjoy!
