Instant Pot Contest Winning Hearty Hamburger Soup
When I saw the recipe for contest winning hearty hamburger soup on Taste of Home I knew that it would be a perfect candidate to make in the Instant Pot. Soups generally are. This soup is a simple ground beef and veggie soup that tastes nourishing and is satisfying with only 217 calories. The author of the original recipes states, “At family get-togethers, our children always request this spirit-warming ground beef soup along with a fresh loaf of homemade bread and tall glasses of milk. This hamburger soup has robust flavor, plenty of fresh-tasting vegetables and is easy to make.“
What should I serve with hamburger soup? Please try my favorite cornbread recipe from Mel’s Kitchen Café if you haven’t already. Or my favorite recipe for easy homemade French bread. It’s so good slathered with butter.
How to store the leftovers? Store leftovers in an airtight container in the refrigerator for up to 7 days. I haven’t tried freezing this soup. I worry about the potatoes getting grainy and mushy after freezing.
Can I halve this recipe? Yes. Halve all the ingredients and keep the same cooking time.
Can I double this recipe? There is too much soup to double in the 6 quart pot. You can 1.5 times the recipe in an 8 quart pot. Keep the cooking time the same.
Can I use fresh or canned green beans instead of frozen? You can use fresh green beans in the place of frozen green beans. Wash and trim them and then add into the pot in step 3. If you’d like to use canned green beans drain them and add after the pressure cooking time is up in step 5.

Instant Pot Contest Winning Hearty Hamburger Soup

Description
An easy to make, great tasting soup with ground beef and vegetables. Tastes perfect with fresh baked bread or a slice of cornbread with honey butter.
Ingredients
- 1 pound lean ground beef or ground turkey
- 1 cup chopped onion
- 4 cups beef broth
- 1 (14.5 oz) can diced tomatoes
- 2 Tbsp tomato paste
- 3 medium carrots, sliced
- 3–4 cups peeled and cubed potatoes
- 1/2 cup chopped celery
- 1 1/4 tsp kosher salt
- 1/2 tsp pepper
- 1/2 tsp oregano
- 1 (12 oz) bag frozen green beans
Instructions
Instant Pot Instructions:
- Turn Instant Pot to sauté setting. When display says hot add in the beef and break it up. Add in the onions and half of the kosher salt. Brown the ground beef for about 5 minutes. Drain off any excess grease.
- Pour the broth into the pot and scrape the bottom of the pot so that nothing is sticking.
- Add in the diced tomatoes, tomato paste, carrots, potatoes, celery, remaining salt, pepper, oregano and green beans.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the SOUP button to 3 minutes. When time is up let the pot sit for 5-10 minutes and then move the valve to venting. Remove the lid.
- Stir and ladle into bowls and serve. Salt and pepper to taste.
Slow Cooker Instructions:
- Heat a pan over medium high heat. Add in the beef and break it up. Add in the onions and half of the kosher salt. Brown the ground beef for about 5 minutes. Drain off any excess grease. Add the beef and onions into the slow cooker.
- Pour in the broth, diced tomatoes, tomato paste, carrots, potatoes, celery, remaining salt, pepper, oregano and green beans.
- Cover and cook on low for 4-6 hours.
- Stir and ladle into bowls and serve. Salt and pepper to taste.
Notes
You can use fresh green beans in the place of frozen green beans. Wash and trim them and then add into the pot in step 3. If you’d like to use canned green beans drain them and add after the pressure cooking time is up in step 5.
I used my 6 quart Instant Pot Duo 60 7 in 1*. Use the 8 quart pot with no changes. For 3 quart pot, halve the recipe and keep the cooking time the same.

So, this was fantastic! Full disclosure, I made this stove top, nothing complicated just brought everything to a boil, after cooking ground beef and sauteing the onions, then simmered for about 1-2 hours. I added 1/4 tsp of Slap Your Mama cajun spice for some kick, added a can of corn with the green beans at the end. Throw a slab of cornbread on top of your bowl of soup and it was a hit in my house.

Can you replace pasta for potatoes?
Yes that would work great. I would keep the same cooking time for penne, rotini, bowties, etc.
