Sinfully Great Kielbasa Casserole–an easy slow cooker or oven dinner made with smoked sausage, tender potatoes, peppers, onions and a simple creamy Cajun sauce that’s perfect for busy weeknights.

Sinfully Great Kielbasa Casserole

This recipe is a little different but I was intrigued when I read the original recipe on Food.com. I think this recipe could be varied and adapted to your families likes. For example, try adding in carrots and mushrooms. You can use a red or yellow bell pepper instead of green. The original author said, “”Great served with biscuits and salad. If there is any left over, your co-workers will want this recipe after they smell it reheating in the microwave for lunch the next day. That’s how I got it. Amounts can be adjusted to suit your family’s preferences.”

Ingredients/Substitution Ideas

  • Russet potatoes–or Yukon Gold potatoes or red potatoes
  • Kielbasa–or smoked sausage, turkey kielbasa, or andouille sausage for extra spice
  • Green bell pepper–or red, orange, or yellow bell pepper
  • Onion–or shallots
  • Olive oil–or avocado oil
  • Cajun seasoning–or another seasoning of your choice with salt
  • Heavy cream
  • Tomato sauce–optional

Steps

Add potatoes, kielbasa, green bell pepper, onion, olive oil and cajun seasoning to slow cooker. Stir well.
Cover and cook on high for 2 hours. Stir.

Pour in the heavy cream and cook without the lid for 20 minutes until a sauce forms.
Stir and serve. (If desired stir a can of tomato sauce in with it).

Notes/Tips

  • Serve with crusty French bread, garlic bread or green beans.
  • I used my 6 quart slow cooker.
  • Top each serving with a bit of parmesan cheese.
  • Slice the potatoes into evenly sized cubes so they cook at the same rate. If your slow cooker runs hot, check the potatoes around the 1½-hour mark.
  • The optional tomato sauce changes the dish quite a bit, making it more like a creamy Cajun tomato sauce. It’s delicious both ways, so choose whichever sounds best to your family.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days.

Description

An easy slow cooker or oven dinner made with smoked sausage, tender potatoes, peppers, onions and a simple creamy Cajun sauce that’s perfect for busy weeknights.


Ingredients

Scale
  • 16 oz peeled and cubed russet potatoes
  • 12 oz sliced kielbasa
  • 1 green bell pepper, cored and sliced
  • 1 small onion, very thinly sliced
  • 2 Tbsp olive oil
  • 3/4 tsp cajun seasoning
  • 1/2 cup heavy cream
  • 8 oz tomato sauce (optional)

Instructions

Slow Cooker Instructions:

  1. Add potatoes, kielbasa, green bell pepper, onion, olive oil and cajun seasoning to slow cooker. Stir well. 
  2. Cover and cook on high for 2 hours. Stir. Pour in the heavy cream and cook without the lid for 20 minutes until a sauce forms.
  3. Stir and serve. (If desired stir a can of tomato sauce in with it).

Oven Instructions:

  1. Add potatoes, kielbasa, green bell pepper, onion, olive oil and cajun seasoning into a 9×13 inch baking dish. Toss well.
  2. Cover with foil and bake for 1 hours, or until potatoes are tender.
  3. Lower the temperature to 350° F. Pour cream over the top and bake uncovered for 15 minutes.
  4. Remove and let sit for 10 minutes until a sauce forms. Stir and serve. (If desired stir a can of tomato sauce in with it).
