Description

An easy slow cooker or oven dinner made with smoked sausage, tender potatoes, peppers, onions and a simple creamy Cajun sauce that’s perfect for busy weeknights.


Ingredients

Scale
  • 16 oz peeled and cubed russet potatoes
  • 12 oz sliced kielbasa
  • 1 green bell pepper, cored and sliced
  • 1 small onion, very thinly sliced
  • 2 Tbsp olive oil
  • 3/4 tsp cajun seasoning
  • 1/2 cup heavy cream
  • 8 oz tomato sauce (optional)

Instructions

Slow Cooker Instructions:

  1. Add potatoes, kielbasa, green bell pepper, onion, olive oil and cajun seasoning to slow cooker. Stir well. 
  2. Cover and cook on high for 2 hours. Stir. Pour in the heavy cream and cook without the lid for 20 minutes until a sauce forms.
  3. Stir and serve. (If desired stir a can of tomato sauce in with it).

Oven Instructions:

  1. Add potatoes, kielbasa, green bell pepper, onion, olive oil and cajun seasoning into a 9×13 inch baking dish. Toss well.
  2. Cover with foil and bake for 1 hours, or until potatoes are tender.
  3. Lower the temperature to 350° F. Pour cream over the top and bake uncovered for 15 minutes.
  4. Remove and let sit for 10 minutes until a sauce forms. Stir and serve. (If desired stir a can of tomato sauce in with it).
