Cozy Farmhouse Beef and Potato Casserole–a cheesy beef and potato casserole that’s an easy one-pot dinner made with ground beef, tender potatoes, carrots, corn and cheddar cheese in the Instant Pot or slow cooker.

Cozy Farmhouse Beef and Potato Casserole
This was such a good one-pot meal with the meat, potatoes and veggies all cooked together! Greg and I thoroughly enjoyed this dish, and I loved that it was made with easy ingredients that you probably already have on hand. It’s hearty, cheesy and filling without needing much else to go with it. You can make it quickly in the Instant Pot or let it cook for a few hours in the slow cooker. Enjoy!
Ingredients/Substitution Ideas
- Lean ground beef–or ground turkey
- Onion–or shallot
- Garlic powder–or 1 Tbsp minced fresh garlic
- Dried parsley
- Dried thyme
- Black pepper
- Kosher salt
- Worcestershire sauce
- Tomato paste–ketchup can work in a pinch, although it will be sweeter
- Chicken or beef broth–or water and Better than Bouillon
- Celery
- Carrots
- Russet potatoes–or Yukon Gold potatoes
- Frozen corn–or frozen mixed vegetables
- Cream cheese
- Cheddar cheese–or Colby Jack
Steps
Turn Instant Pot to sauté setting. When display says HOT add in the beef and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease. Stir in the garlic powder, parsley, thyme, pepper, salt, Worcestershire and tomato paste.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
Dump in the celery, carrots and potatoes. Sprinkle a pinch of salt over the potatoes. Add in the corn and cream cheese. Don’t stir.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 2 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.

Gently stir in the cheddar cheese.


Serve and enjoy!

Notes/Tips
- This was a one pot meal for us but if you want a side dish serve with a dinner roll or cornbread and green beans or fresh fruit.
- Want even more veggies? Try adding in mushrooms and green beans.
- This recipe can be gluten free if you use gluten free Worcestershire sauce.
- I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot. You can cut this recipe in half for a smaller group (that’s what I did).
- Store leftovers in an airtight container* in the refrigerator for 4 days. For the best texture, I’d recommend enjoying this one fresh or refrigerated rather than freezing it.

- 16 oz lean ground beef
- 1 cup diced onion
- 1 tsp garlic powder

- 1/2 tsp dried thyme
- 1 tsp black pepper

- 1 rib celery, sliced
- 2 large carrots
- 32 oz Russet potatoes, peeled and cut into 1/2 inch cubes
- 2 cups frozen corn
- 4 oz cream cheese
- 1 cup shredded cheddar cheese

Slow Cooker Instructions:
- Heat a pan over medium high heat. Add in the beef and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease. Stir in the garlic powder, parsley, thyme, pepper, salt, Worcestershire and tomato paste. Transfer to the slow cooker.
- Stir in the broth, celery, carrots and potatoes. Sprinkle a pinch of salt over the potatoes. Add in the corn and stir.
- Cover and cook on high for 2-3 hours, until tender. Stir in the cream cheese and let it melt.
- Gently stir in the cheddar cheese.
- Serve and enjoy!
