Incredible French Onion Ground Beef Casserole–an easy Instant Pot dinner made with ground beef, sliced onions, seasoned rice, melted Parmesan and mozzarella and crispy French fried onions on top.

Incredible French Onion Ground Beef Casserole
Greg and I gobbled this up in no time and we didn’t even have leftovers! The flavor was totally on point, and I loved how the cheesy rice had just a little sweetness from all the onions. Everything was savory, cheesy and so good together. The crispy French fried onions on top finished it off perfectly with a little crunch in every bite. Try this one this week 🙂
Ingredients/Substitution Ideas
- Lean ground beef–or ground turkey, ground pork
- Onion–yellow or Vidalia
- Kosher salt
- Garlic powder
- Onion powder
- Dried thyme
- Worcestershire sauce
- Water
- Better Than Bouillon beef base
- Converted rice–Also called parboiled rice. I buy this in the bulk bins at Winco.
- Butter–You can leave it out if you’d like, but it adds richness to the rice.
- Parmesan cheese
- Mozzarella cheese–I used Tilamook whole milk mozzarella and it’s so good. You can also use provolone or Gruyère.
- French fried onions–optional, but I recommend them for crunch.
Steps
Turn Instant Pot to sauté setting. When display says HOT add in the beef and break it up. Brown until no longer pink. Stir in the onions and cook for another 2 minutes. Drain excess grease, if needed. Then stir in the salt, garlic powder, onion powder and thyme.

Pour in the Worcestershire and water and scrape the bottom of the pot so that nothing is sticking. Turn off Instant Pot. Stir in the Better than Bouillon.

Sprinkle in the rice and gently press to submerge. Add in the butter on top.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 5 minutes. When time is up let pot sit for 10 minutes and move valve to venting. Remove the lid.

Stir in the parmesan and mozzarella.

Scoop onto plates and top each serving with some French fried onions.


Notes/Tips
- Serve with roasted broccoli, green beans or asparagus.
- I used my pink 4 quart Instant Pot*. You can also make this in a 6 or 8 quart pot.
- What is converted/parboiled rice? Don’t confuse converted rice (or sometimes it is called parboiled rice) with pre-cooked or minute rice. Parboiled rice has been processed in its husk by soaking, steaming, and drying. As a result, all the nutrients from the husk are absorbed into the grain before it’s removed. The starch content alters in the process, making cooked parboiled rice less sticky than regular white rice. The rice kernels aren’t clumpy and glued together instead they are more separated. I found a bag of parboiled rice at Walmart next to the normal long grain white rice. Sometimes I buy it at Winco in the bulk section. I have also found it in the orange box (Ben’s brand) next to other rices.
- Sprinkle the rice evenly into the liquid and gently press it down so it’s submerged. This is a good way to avoid having rice stick to the bottom of the pot.
- Mushrooms would be especially good in this. Sauté sliced mushrooms along with the onions. You can also add in a can of drained mushrooms.
- This can be gluten free if you use gluten free Worcestershire sauce and forego using the french fried onions.
- Store leftovers in an airtight container* in the refrigerator for 4 days. You can freeze the beef and rice mixture in an airtight container for up to about 3 months.
