Delicious Neiman Marcus Kielbasa Casserole
Inspired by a chicken casserole served at the cafe at Neiman Marcus back in the day, this indulgent dinner is always a huge hit! How can you go wrong with a creamy casserole filled with smoky sausage, creamy rice, crispy bacon, melty cheddar and slivered almonds?! I decided to make this dish with arborio rice which gives it that ultra creamy texture. The sausage flavors the entire dish. And the addition of almonds at the end adds a crunchy element. Enjoy!
Ingredients/Substitution Ideas
- Butter–or olive oil
- Kielbasa–or beef smoked sausage, turkey kielbasa or chicken sausage
- Arborio rice–I recommend sticking with arborio rice for this recipe since it gives the dish a creamy texture. I buy it in the bulk bins at Winco.
- Water
- Better than Bouillon chicken base
- Onion powder
- Garlic powder–or 1 Tbsp minced fresh garlic can be used. Add it during the last 30 seconds of sautéing the kielbasa.
- Sour cream
- Shredded cheddar–or Colby Jack
- Crumbled bacon–you can cook and crumble your own bacon
- Slivered almonds–or sliced almonds, or leave the nuts out if you prefer
- Green onions–or chives
Steps
Turn Instant Pot to sauté setting. When display says HOT add in the butter and let it melt. Add in the kielbasa and brown for 5 minutes. Stir in the rice and coat in the butter.


Pour in the water and scrape bottom of pot so that nothing is sticking, Turn off Instant Pot.
Stir in the bouillon, onion powder and garlic powder.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 5 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.

Stir in the sour cream, cheese, bacon, almonds and green onions.

Serve and enjoy!


Notes/Tips
- Serve with steamed broccoli, roasted green beans, a green salad or fresh fruit.
- Arborio rice releases more starch as it cooks, which is what gives this dish its extra creamy consistency.
- Cheese that you shred yourself generally melts more smoothly than pre-shredded cheese.
- Stir in baby spinach at the end and let it wilt, or add some thawed frozen peas after pressure cooking. Sautéed mushrooms would also be really good.
- This recipe is gluten free.
- I used my pink 4 quart Instant Pot*. You can also make this in a 6 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days. You can freeze individual portions in airtight freezer containers for up to about 2 months.
