John Deere Casserole–this quick and easy broccoli and corn bake has buttery Ritz cracker crumbs, a hint of smoked paprika, and melty parmesan on top.

John Deere Casserole
This dish gets its name from the green broccoli and golden corn, the same iconic color combo you see on John Deere tractors. The buttery Ritz topping gives you that little crunch, and the smoked paprika adds a subtle depth. It’s one of those dishes you can throw together last minute to have a veggie to go with any main dish. I liked that it uses frozen broccoli and corn, something that I always have in my freezer…plus no chopping! (Recipe adapted from here).
Ingredients/Substitution Ideas
- Frozen broccoli florets–or cauliflower
- Frozen sweet corn
- Butter
- Kosher salt
- Black pepper
- Garlic powder
- Onion powder
- Smoked paprika
- Ritz crackers–or chicken in a biscuit crackers
- Parmesan cheese–or shredded cheddar
Steps
Heat oven to 375° F. In a microwave safe bowl add the broccoli and corn. Heat in microwave for 3 minutes. Drain off any water.
Stir in 1 Tbsp of the butter, salt, pepper, garlic powder, onion powder and smoked paprika.

Spread into a 9×9 inch baking dish.

Mix together the remaining butter and the crushed Ritz. Sprinkle over the top. Bake for 20 minutes.

Sprinkle the parmesan on top. Bake for 5 more minutes. Serve and enjoy!

Notes/Tips
- This goes great with grilled chicken, baked salmon, pork chops, or any weeknight main dish.
- Double this recipe to serve 6-8 people. Bake in a 9×13 inch pan.
- Want a creamy version? Try stirring the broccoli together with a can of cream of mushroom or cream of chicken soup. Don’t add in the salt.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.
