Side Hustle Casserole

When you’re hustling to make dinner consider this side dish! It is seriously so delicious and a perfect side dish to anything on the grill. The flavors of Mexican street corn and a bit of zucchini along for the ride are like summer in your mouth. We took this one down in no time and my house! I will definitely be making again soon.

Ingredients/Substitution Ideas

  • Zucchini–go for smaller
  • Frozen sweet corn–I like white sweet corn. Or fresh corn on the cob.
  • Kosher salt
  • Black pepper
  • Garlic powder
  • Onion powder
  • Red pepper flakes
  • Mayonnaise
  • Parmesan cheese
  • Hot sauce–I used Franks
  • Lime juice–fresh is best
  • Butter

Steps

Heat oven to 350° F (or you can use a slow cooker)

In a mixing bowl toss together the zucchini, corn, salt, pepper, garlic powder, onion powder and red pepper flakes. 

In a small bowl whisk together the mayo, parmesan, hot sauce and lime juice. Fold it into the corn so that it’s covered in the sauce.

Add the corn mixture into a baking dish (a 8×8 inch pan works well) or the slow cooker. Add the butter on top.

Bake for 30 minutes in the oven or cook in the slow cooker on high for 2 hours.

Serve and enjoy!

Notes/Tips

  • Serve as a side dish to any summer meal. Tastes great with grilled meats and watermelon.
  • This recipe is gluten free.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days.
