No Name Casserole
Today’s recipe is different than anything I’ve ever made before. It seems weird, doesn’t look that appetizing but it actually was so yummy. I grabbed the recipe from Paleo in PDX and the author states, “Does no name casserole sound familiar to anyone? This is a recipe I grew up with and always enjoyed, despite how undesirable and drab looking it appears…I remember liking the flavors of this dish growing up and decided to reinvent it, paleo-style…The casserole is not the prettiest looking thing, but it is delicious. Its flavors did resemble that of the original, but in my humble opinion, it tasted even better!”
Ingredients/Substitution Ideas
- Lean ground beef–or ground turkey
- Onion–yellow or white
- Celery
- Mushrooms
- Kosher salt
- Black pepper
- Ground thyme
- Frozen cauliflower rice
- Coconut milk
- Low sodium soy sauce–or tamari
- Sliced almonds
Steps
Heat a large pan over medium high heat. Add in the beef and break it up. Add in the onions, celery, mushrooms, salt, pepper and thyme. Cook until veggies are soft and beef is cooked through.

Stir in the cauliflower, coconut milk and soy sauce and simmer until cooked through.



Serve topped with sliced almonds.

Notes/Tips
- Serve with cucumber salad or roasted green beans and some buttered bread.
- This recipe can be gluten free if you use gluten free soy sauce.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

- 1/2 cup sliced celery
- 4 ounces sliced mushrooms
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 tsp ground thyme
- 1 (10 oz) package frozen cauliflower rice
- 1 cup coconut milk
- 1 Tbsp low sodium soy sauce
- Sliced almonds, for topping
Instructions

I agree about the celery. Is this just a missed item or something added but not listed?? Does look very interesting and would love to make it but want to make sure about the ‘celery’ issue first.

Do you mean canned coconut milk or like a carton of milk? This recipe looks good and I have celery in my fridge now.

There is celery in the picture, but celery is not mentioned in the ingredient list or in the recipe directions. If celery should be included, how much would you suggest? Was celery the only missing ingredient?
