Supercharged Casserole–superfoods like kale, sweet potatoes, lentils, cauliflower and turmeric combined in an easy and FAST Instant Pot meal with lots of flavor.

Supercharged Casserole

If you’re looking to level up your nutrition and have a filling lunch or dinner try out this supercharged Instant Pot one-pot meatless meal. You’re going to love the bright colors and various textures in this dish. The flavor reminds me a bit of Indian food with the coriander and turmeric. I had a helping for dinner and then again for lunch today. My body is thanking me by giving me extra energy.

Some of the ingredients in this dish and their benefits are:

  • Red lentils: A good source of plant-based protein and fiber.
  • Sweet potatoes: High in fiber, vitamins (especially vitamin A and C), and minerals. They are a nutrient-dense carbohydrate.
  • Kale: A nutrient powerhouse, kale is rich in vitamins (A, K, C), minerals, and antioxidants. It’s also a good source of fiber.
  • Cauliflower rice: A low-calorie and low-carb alternative to traditional rice. It’s high in fiber, vitamins, and minerals.

Ingredients/Substitution Ideas

  • Olive oil–or another type of oil
  • Onion–yellow, white or a shallot
  • Garlic cloves
  • Ground ginger
  • Ground turmeric
  • Cumin
  • Smoked paprika
  • Coriander
  • Water
  • Better than Bouillon vegetable base–or you can use 1 cup of vegetable broth
  • Tomato paste
  • Red/pink lentils
  • Sweet potatoes–or sliced carrots, butternut squash
  • Kale–or spinach
  • Frozen cauliflower rice–I usually buy this at Costco or Sam’s

Steps

Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl it around. Add in the onion and saute for 3 minutes. Add in the garlic, ginger, turmeric, cumin, paprika, coriander and saute for 30 seconds.

Pour in the water and scrape bottom of pot so that nothing is sticking. Stir in the bouillon and tomato paste. Turn off Instant Pot.

Dump in the lentils, sweet potatoes, kale and cauliflower rice (in that order). Don’t stir. Sprinkle in the salt and pepper.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 1 minute. When time is up move valve to venting and remove the lid.

Stir.

Scoop onto plates and enjoy!

Notes/Tips

  • If you’d like to serve some meat with this dinner try rotisserie chicken, grilled pork chops or steak bites.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
  • Other recipes you can make with kale are Instant Pot Parmesan Sausage Kale Soup and Instant Pot Smoky Sausage, Potato And Kale Soup.
  • Why did you use red lentils? Red lentils cook very quickly in the Instant Pot, much quicker than brown/green lentils. I needed the lentils, sweet potatoes and cauliflower rice to cook at the same rate. If I used brown lentils I would have overcooked the sweet potatoes created a mushy mess. By using the red lentils everything cooked in a 1 minute pressure cooking time.
  • I bought my red lentils in the bulk section at Winco.
  • This recipe is gluten free, dairy free and vegan.

Ingredients

Scale
  • 1 Tbsp olive oil
  • 1 cup diced onion
  • 2 large garlic cloves, minced
  • 1/2 tsp ground ginger
  • 3/4 tsp turmeric
  • 3/4 tsp cumin
  • Pinch of smoked paprika
  • 1/4 tsp coriander
  • 1 cup water
  • 1 teaspoon Better than Bouillon vegetable base
  • 1 Tbsp tomato paste
  • 1/4 cup red lentils
  • 1 heaping cup of cubed sweet potatoes (1/2 inch cubes)
  • 1 large kale leaf, stem removed and chopped
  • 1 (12 oz) bag frozen cauliflower rice
  • 1 tsp kosher salt
  • 1/2 tsp black pepper

    Anyone know if I can make Supwrcharged Dinnwr in a slow cooker? Maybe substitute the red lentil with green lentils? Would you put I all the ingredients in at the same time? How long would you cook it on low?
