Description
An easy one-pan meal combining ground beef, mushrooms, and cauliflower rice in a coconut milk sauce and topped with sliced almonds.

- 1/2 pound lean ground beef
- 1/2 cup diced onions
- 1/2 cup sliced celery
- 4 ounces sliced mushrooms
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 tsp ground thyme
- 1 (10 oz) package frozen cauliflower rice
- 1 cup coconut milk
- 1 Tbsp low sodium soy sauce
- Sliced almonds, for topping
Instructions
- Heat a large pan over medium high heat. Add in the beef and break it up. Add in the onions, celery, mushrooms, salt, pepper and thyme. Cook until veggies are soft and beef is cooked through.
- Stir in the cauliflower, coconut milk and soy sauce and simmer until cooked through.
- Serve topped with sliced almonds.
