Upgrade Me Casserole–upgrade your plain cauliflower rice to something amazing! With orzo, garlic, white cheddar and broccoli this dish has lots of flavor. Make it FAST in your Instant Pot.

Upgrade Me Casserole

Upgrade Me Casserole

This dish upgrades any weeknight to something special. The flavor is so yummy and you’ll be happy to sneak in some veggies with your dinner too. With only a 1 minute pressure cooking time this dinner comes together super fast. Try it! Even if you don’t think you like cauliflower rice I think you’ll really love this dish.

Ingredients/Substitution Ideas

  • Butter
  • Onion
  • Garlic cloves
  • Chicken broth–or water and Better than Bouillon chicken base
  • Orzo
  • Chopped cooked chicken–I used rotisserie chicken
  • Frozen cauliflower rice
  • Kosher salt
  • Black pepper
  • Ground mustard
  • Cayenne pepper–this adds a bit of heat, you may want to cut it in half
  • Sharp white cheddar cheese
  • Frozen broccoli–or another vegetable like peas

Steps

Turn Instant Pot to saute setting. When display says HOT add in the butter and let it melt. Add in the onion and saute for 4 minutes. Add in the garlic and saute for 30 seconds.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Add in the orzo, chicken, cauliflower rice, salt, pepper, mustard powder and cayenne.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 1 minute. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid. 

Stir in the cheese. Cook the vegetables according to package directions and then stir into the pot. 

Serve and enjoy!

Notes/Tips

  • Serve with a side of garlic bread or a dinner roll and some fresh fruit.
  • I used my 3 quart Instant Pot*. You can also make this in a 6 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
  • Other recipes you can make with white cheddar are white cheddar macaroni and google casserole.

Description

Ingredients

  • 1 Tbsp butter
  • 1/2 cup diced onion

  • 1 cup chicken broth
  • 3 ounces (1/2 cup) orzo
  • 2 cups chopped cooked chicken
  • 1 (10 oz) package frozen cauliflower rice
  • 1/2 tsp kosher salt

  • 1/4 tsp ground mustard
  • 1/4 tsp cayenne pepper
  • 6 ounces shredded sharp white cheddar cheese
  • 1 (12 oz) package frozen broccoli

Instructions

    Unfortunately, the orzo burned to the liner bottom. But I was able to eat most of it and I liked the taste!
    I know what I did wrong and will try again.
