Get in my belly cauliflower stir fry supper
This is a lower calorie version of fried rice and it’s so tasty! I love food like this and I think you will really enjoy this flavorful dinner too. It’s got lots of healthy veggies. The use of turkey smoked sausage brings a lot of flavor to the dish. If you don’t love cauliflower rice you can make this with white rice too. It’s up to you!
Ingredients/Substitution Ideas
- Cabbage–I used green cabbage
- Frozen mixed vegetables–mine had corn, carrots, peas and green beans
- Turkey smoked sausage–I used Hillshire brand. You can use whatever type of smoked sausage you like best.
- Frozen cauliflower rice–I buy this at Costco
- Canola–or vegetable oil
- Low sodium soy sauce
- Ginger–I wrap mine in foil and store in the freezer. Then I grate it frozen for recipes like this one.
- Garlic powder
- Sesame oil
- Seasoned rice vinegar–or regular rice vinegar
Steps
- Prepare Instant Pot: Take frozen cauliflower out of freezer and let it sit on counter to thaw out a bit while doing step 1 and 2. Pour 1 ½ cups of water into bottom of Instant Pot. Add the cabbage and frozen mixed vegetables into a steamer basket*. Lower the basket into the Instant Pot.
- Pressure cook: Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 0 (zero) minutes. When time is up move valve to venting and remove the lid.
- Fry the sausage and cauliflower: Remove the steamer basket and set aside. Discard the water and dry out the pot. Turn Instant Pot to sauté setting and heat up. When display says HOT add in 1 Tbsp of canola/vegetable oil. Add in the sausage and toss to brown for 2 minutes. Add in 2 remaining tablespoons of oil and then add in the cauliflower and toss well and heat through.
- Make the sauce: In a small bowl whisk together the soy sauce, ginger, garlic powder, sesame oil, and vinegar. Pour the mixture into the Instant Pot and toss well.
- Stir in the cabbage and mixed vegetables. Turn off Instant Pot.
- Serve: Taste test and add more soy sauce to taste. Serve and enjoy!
Notes/Tips
- What if I don’t like cauliflower rice? If you want to make this recipe with regular white rice you totally can! Just use cold leftover rice instead of frozen cauliflower rice. You’ll probably want 4-5 cups of cooked rice.
- Can I use another type of meat? Yes you can. You can use any cooked and seasoned meat you want. Try chicken, ground beef, ground turkey, etc.
- This is an all in one pot meal but if you want you can serve with a dinner roll or a slice of buttered bread.
- I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
- This recipe can be gluten-free if you use gluten-free soy sauce. This recipe is dairy free.
- What should I do with the other half a head of cabbage? Try making Instant Pot Shipwreck Casserole, Instant Pot Cabbage Roll Soup or Instant Pot Farmer’s Delight Casserole.
- Another recipe you can make with riced cauliflower is Instant Pot Quarantine Casserole.
