Tallerini Casserole

Today’s recipe is an easy Instant Pot pasta dish that is perfect for a weeknight dinner. It’s ready in under 30 minutes and has minimal cleanup. You can easily double the recipe to serve 6 or make the original recipe amount for a smaller group. This recipe has been adapted from Cheery Kitchen. The author said, “What’s in a name?  My mom made Johnny Marzetti, and my MIL made Tallerini…I know my family loves Tallerini Casserole and my friends I share it with request the recipe. I wrongly assumed everybody makes this one! We always serve it at informal family parties with broiled garlic-cheesy bread, a tossed green salad and root-beer floats!”

Ingredients/Substitution Ideas

  • Ground sausage–regular or Italian
  • Onion
  • Chicken broth–or beef broth
  • Rotini–or elbow macaroni
  • Crushed tomatoes
  • Frozen sweet corn
  • Green bell pepper
  • Italian seasoning
  • Onion powder
  • Garlic powder
  • Cheddar cheese–I used sharp

Steps

Turn Instant Pot to saute setting. When display says HOT add in the sausage and break it up. Add in the onion and brown for 5 minutes. Drain off excess grease.

Stir in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 

Sprinkle in the rotini. Dump in the tomatoes, corn, green pepper, Italian seasoning, onion powder and garlic powder. 

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid. 

Stir. Sprinkle the cheese on top and let it melt. Serve and enjoy!

Notes/Tips

  • Serve with garlic bread and a green salad.
  • If you love olives add in a small can of sliced olives.
  • I used my 3 quart Instant Pot*. You can also make this in a 6 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Description

An easy Instant Pot pasta dish featuring sausage, green pepper, corn and cheddar. 


Ingredients

  • 1/2 pound ground sausage
  • 1/2 cup diced onion
  • 1 cup chicken broth
  • 4 ounces rotini
  • 1 (15 oz) can crushed tomatoes
  • 1/2 cup frozen sweet corn
  • 1/2 cup diced green pepper
  • 1/2 tsp Italian seasoning
  • 1/2 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 cup shredded cheddar cheese
