Susan’s Casserole–an Instant Pot penne pasta dish with pepperoni pizza vibes. It’s easy to make and kids love it!

Susan’s Casserole

This is an easy and fun penne pasta dish with roasted garlic sauce, pepperoni, mozzarella and mushrooms. If you’re a fan of the supreme pizza feel free to add in olives and green pepper too. With the Instant Pot you don’t have to boil the water for the pasta…you just throw everything into the pot and walk away. I love how the sauce gets absorbed into the pasta using this method. I think you’ll love it too.

Ingredients/Substitution Ideas

  • Italian sausage–I use mild
  • Onion
  • Mushrooms
  • Chicken broth–or water and Better than Bouillon chicken base
  • Penne pasta
  • Pasta sauce–I used Mezzetta roasted garlic sauce
  • Mini pepperoni–or chopped regular size pepperoni
  • Mozzarella cheese
  • Parmesan cheese

Steps

Turn Instant Pot to saute setting. When display says HOT add in the sausage and break it up. Add in the onion and mushroom. Brown for 5 minutes. Drain off excess grease.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 

Sprinkle in the penne. Dump sauce on top evenly. Add in the pepperoni.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid. 

Stir in the cheeses. Serve and enjoy. 

Notes/Tips

  • Serve with a green salad, olive garden italian dressing and garlic bread.
  • Try using high protein Banza penne pasta…no changes needed to the recipe. This will make the recipe gluten free.
  • Try adding in more pizza ingredients like olives, diced green pepper, canadian bacon etc.
  • This recipe can easily be doubled. Double ingredients and keep cooking time the same. 
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Ingredients

  • 1/2 pound Italian sausage

  • 4 ounces quartered mushrooms
  • 2 cups chicken broth
  • 8 ounces penne pasta
  • 1 (24 oz) jar pasta sauce
  • 1/2 cup mini pepperoni
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup shredded parmesan cheese

Instructions
