Taconite Casserole

Taco Tuesdays are always fun but try switching it up with this taco pasta dish. This one pot meal is actually probably easier to make than regular tacos and you can be eating in just a few minutes. You probably already have everything to make this recipe right now in your kitchen. Total comfort food vibes without being fussy.

Ingredients/Substitution Ideas

  • Lean ground beef–or ground turkey
  • Kosher salt
  • Black pepper
  • Chili powder
  • Cumin
  • Onion powder
  • Garlic powder
  • Oregano
  • Beef broth–or water and Better than Bouillon beef base
  • Rotini–or macaroni
  • Corn–canned or frozen
  • Black beans–or pinto, kidney
  • Tomato sauce
  • Picante sauce–or salsa
  • Sour cream
  • Colby jack cheese–or cheddar
  • Toppings: diced fresh tomatoes, diced green onions

Steps

Turn Instant Pot to saute setting. When display says HOT add in the ground beef and break it up. Brown for 5 minutes. Drain off excess grease. Stir in the salt, pepper, chili powder, cumin, onion powder, garlic powder and oregano. 

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Sprinkle in the rotini. Dump in the corn, beans, tomato sauce and picante sauce. Don’t stir.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 5-10 minutes. Move valve to venting. Remove the lid. 

Stir in the sour cream and cheese. 

Scoop onto plates and serve topped with fresh tomatoes and green onions.

Notes/Tips

  • Serve with a green salad.
  • Sour cream can be omitted from this recipe.
  • Try adding sliced olives on top of each serving.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Description

Beef and pasta with a taco flare made fast in the Instant Pot.


Ingredients

Scale
  • 1 pound lean ground beef
  • 1/2 tsp kosher salt
  • 1 tsp black pepper
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Pinch of oregano
  • 2 cups beef broth
  • 8 ounces rotini
  • 1 (15.25 oz) can corn, drained
  • 1 (15.5 oz) can black beans, rinsed and drained
  • 1 (8 oz) can tomato sauce
  • 1 cup picante sauce or salsa
  • 1/3 cup sour cream
  • 3/4 cup shredded colby jack
  • Toppings: diced fresh tomatoes, diced green onions

Instructions

    I cut the recipe in half for the two of us and it was great. The only thing I changed was had half a can of green chillies in the fridge so threw em in. Thanks Karen. Love your recipes 😋

    Can this recipe be doubled and cooked in a 6 quart IP? Would cook time be affected? Sounds delish and was planning to take to a potluck. TIA

        Karen, thanks for the quick reply. I did double the recipe and used one pound of lean ground beef and one pound of taco flavored ground turkey and doubled everything else. It came out PERFECT and everyone at the potluck loved it and wanted the recipe. The pasta was not overcooked at all. I was even able to bring some home and froze it in individual containers. I have since thawed and eaten one container (cooked in the micro with additional cheddar on top). It was perfect as well.

        I send all my friends to your site for IP recipes. I have yet to have a bad meal. Thanks for all you do for us IP lovers. It’s pretty much the only way I cook now. You go girl!!!

    I didn’t have any corn so I used white hominy. It was still so good!!! Not salty which is a huge plus in out home. I did use better than bouillon as well.
    Wonderful quick meal!

      I have heard from others that it usually works better to cook the gluten free noodles separate, as they often stick and get the burn message. You would reduce the liquid or even let the tomato’s be the liquid. Best of luck
