I Don’t Feel Like Cooking Tonight Casserole

If you’re out of energy or time this is a super fast and easy Instant Pot recipe with what you have in your pantry and fridge. With only a 1 minute pressure cook time and not a lot of prep (just cutting the broccoli) you can be eating in just a few minutes. This is also a one pot meal so clean up is a breeze! If you want to make it heartier stir in some cooked chicken. I always keep 1 cup containers of cooked, chopped chicken in my freezer for these types of occasions.

Ingredients/Substitution Ideas

  • Chicken broth–or water and Better than Bouillon chicken base
  • Black pepper
  • Onion powder
  • Garlic powder
  • Kosher salt
  • Egg noodles
  • Broccoli florets–fresh or frozen
  • Cottage cheese
  • Sharp cheddar

Steps

Pour broth into Instant Pot. Add in the pepper, onion powder, garlic powder and salt. Sprinkle in the noodles. Add broccoli evenly over the top of the noodles.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 1 minute. When time is up let pot sit for 5 minutes and then move valve to venting. 

Stir in the cottage cheese and cheddar. 

Scoop onto plates and enjoy!

Notes/Tips

  • Serve with a side salad or some sauteed mushrooms.
  • Try adding in some rotisserie chicken to this pasta dish to make it more hearty and add more protein.
  • Try adding in some diced fresh tomatoes after the pressure cooking time is up.
  • Can I substitute a different type of pasta? The reason I chose egg noodles is because they only take a 1 minute pressure cook time and that matches up with the amount of time that the broccoli needs to cook. If you use a different type of pasta chances are it will require a longer cooking time and then the broccoli will be mush. So you can use another pasta but you’ll probably want to cook the broccoli separately and stir it in after the pressure cooking time is over.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

A quick Instant Pot pasta dish with tender broccoli, cheesy goodness, and simple seasonings for a comforting, no-fuss meal on the nights you don’t want to cook!


Ingredients

Scale
  • 2 1/2 cups chicken broth
  • 1/2 tsp black pepper
  • 1/2 tsp onion powder
  • 1 tsp garlic powder
  • Pinch of kosher salt
  • 8 ounces wide egg noodles
  • 8 ounces fresh broccoli florets
  • 1 cup cottage cheese
  • 1 cup shredded sharp cheddar

Instructions

    sounds tasty! i get santa fe black beans and rice from beprepaired.com

    i want to make it in my instant pot. its designed for cook top. you need to keep sturing it so it doesent stick to the pan. starts out dehydrated.

    any ideas on how to prepair it in instant pot? i brown 1# hamberger to add in after the beans and ruce cook.

      I’m not 100% sure but this is my guess…I would use saute setting and brown the beef. Then add in the liquid amount suggested on the box. Sprinkle in contents of box and pressure cook for 5 minutes with 10 minutes natural pressure release.
