Jolean’s Casserole–an easy Instant Pot pasta dish featuring savory Italian sausage, mushrooms, and macaroni simmered in crushed tomatoes and beef broth, finished with melty mozzarella and parmesan.

Jolean’s Casserole

This recipe is adapted from Jolean’s Italian Sausage Casserole on Food.com. The original author said, “My Mom used to make this for us, after she was just a little too old to stand in the kitchen for too long…It was one of her favorites that was easy to make, yet tasted like good old-fashioned comfort food…Sure do miss my Mom!!!” It does come together quickly and it was quickly eaten by my boys. Enjoy!

Ingredients/Substitution Ideas

  • Ground Italian sausage–I used mild
  • Mushrooms
  • Beef broth–or chicken broth, Better than Bouillon
  • Macaroni–or cavatappi
  • Crushed tomatoes
  • Butter
  • Onion powder
  • Garlic powder
  • Mozzarella cheese
  • Parmesan cheese

Steps

Turn Instant Pot to saute setting. When display says HOT Add in the sausage and break it up. Brown it for 4 minutes. Add in the mushrooms and cook for another 2 minutes. Drain off excess grease.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Sprinkle in the macaroni.

Dump the tomatoes evenly over the top of the pasta. Add in the butter, onion powder and garlic powder. 

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid. 

Stir well. Stir in the cheeses.

Serve and enjoy!

Notes/Tips

  • Serve with a green salad.
  • Try adding in a half cup of diced green peppers.
  • Add a splash of cream or a dollop of ricotta at the end for a creamier texture, if desired.
  • Top with fresh basil or parsley after serving for a fresh flavor boost.
  • I used my 3 quart Instant Pot*. You can also make this in a 6 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Description

Ingredients

Scale
  • 1 pound ground Italian sausage
  • 8 ounces sliced mushrooms
  • 2 cups beef broth
  • 8 ounces macaroni
  • 1 (28 oz) can crushed tomatoes
  • 2 Tbsp butter
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup shredded parmesan cheese

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT Add in the sausage and break it up. Brown it for 4 minutes. Add in the mushrooms and cook for another 2 minutes. Drain off excess grease.

      This is how I would try. You might need more 1/2 cup more broth though:
      Instructions (Stovetop Method):
      1. Brown the Sausage & Mushrooms:
      In a large skillet or Dutch oven over medium-high heat, cook the Italian sausage until mostly browned, about 4 minutes.
      Add the mushrooms and cook for another 2–3 minutes until softened.
      Drain off excess grease if needed.
      2. Add Liquids and Seasonings:
      Pour in the beef broth and scrape the bottom of the pan to release any browned bits.
      Stir in crushed tomatoes, butter, onion powder, and garlic powder.
      3. Add the Pasta:
      Stir in the macaroni.
      Bring the mixture to a boil, then reduce heat to a simmer.
      4. Simmer:
      Cover and cook, stirring occasionally, for about 10–12 minutes, or until the pasta is tender.
      If it gets too thick before the pasta is cooked, add a splash more broth or water.
      5. Finish with Cheese:
      Once the pasta is cooked and the mixture is thick and saucy, turn off the heat.
      Stir in the mozzarella and Parmesan until melted and creamy.
      6. Serve:
      Let it sit for 5 minutes to thicken slightly before serving.

    Oh, I can’t wait to try this. My own Mom made this for us growing up, only she used hamburger and called it “goulash”…Thusday night special! ha! Hubby gonna love this. Be back with stars. Thanks, Karen, for finding all these amazing recipes that make my life so much easier.
