Slow Cooker Pigs in a Cornfield–an easy one-pot crockpot meal made with tender pork chops, creamy mushroom sauce, fresh corn on the cob and buttery Yukon gold potatoes.

Slow Cooker Pigs in a Cornfield

This recipe is adapted from The Magical Slow Cooker. What a fun name! Pork chops are cooked alongside corn on the cob inside your slow cooker for a true one pot meal. It’s also a dump and go meal which is perfect if you’re short on time to prepare. The original recipe has bacon in it and I fully intended to add it in after the cooking time was over and totally forgot. It was super yummy even without the bacon. Enjoy!

Ingredients/Substitution Ideas

  • Cream of mushroom soup–or cream of chicken soup
  • Evaporated milk
  • Kosher salt
  • Black pepper
  • Dried thyme–or Italian seasoning
  • Dry minced onion
  • Corn on the cob
  • Yukon gold potatoes–or red potatoes or peeled russet potatoes
  • Boneless sirloin pork chops–boneless pork loin chops or thick-cut bone-in pork chops (increase cooking time if needed)

Steps

In a small bowl whisk together the cream of mushroom soup, evaporated milk, salt, pepper, thyme and onion. Set aside.

Break the corn in half and place it into your slow cooker on the sides. Then add the potatoes in the middle. Place the pork chops on top. Spread the soup mixture over the top of everything. 

Cover slow cooker and cook on high for 2-3 hours or on low for 4-6 hours. Remember that all slow cookers cook differently. Pork chops should be 145° F internally and potatoes should be tender. 

Serve and enjoy!

Notes/Tips

  • Serve with steamed green beans or roasted broccoli.
  • I used a 6 quart Ninja slow cooker.
  • Cut the potatoes into evenly sized ¼-inch cubes so they finish cooking at the same time.
  • Try to use pork chops that are about the same thickness so they cook evenly.
  • Try this recipe with chicken thighs instead of pork chops. And you can use cream of chicken instead of cream of mushroom soup.
  • The corn can be cut into thirds instead of halves if needed to fit smaller slow cookers.
  • This recipe can be gluten free if you use gluten free cream of mushroom soup. Campbells makes this now.
  • Store leftovers in an airtight container* in the refrigerator for up to 3-4 days. You can freeze leftovers for up to 2 months.

Description

An easy one-pot crockpot meal made with tender pork chops, creamy mushroom sauce, fresh corn on the cob and buttery Yukon gold potatoes.


Ingredients

Scale
  • 1 (10.5 oz) can cream of mushroom soup
  • 1/4 cup evaporated milk
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried thyme
  • 1 Tbsp dry minced onion
  • 2 ears of corn on the cob
  • 2 medium yukon gold potatoes, cut into 1/4 inch cubes
  • 1 1/2 pounds boneless sirloin pork chops

Instructions
