Description
An easy one-pot crockpot meal made with tender pork chops, creamy mushroom sauce, fresh corn on the cob and buttery Yukon gold potatoes.
Ingredients

- 1 (10.5 oz) can cream of mushroom soup
- 1/4 cup evaporated milk
- 1/4 tsp kosher salt
- 1/4 tsp black pepper
- 1/2 tsp dried thyme
- 1 Tbsp dry minced onion
- 2 ears of corn on the cob
- 2 medium yukon gold potatoes, cut into 1/4 inch cubes
- 1 1/2 pounds boneless sirloin pork chops
Instructions
- In a small bowl whisk together the cream of mushroom soup, evaporated milk, salt, pepper, thyme and onion. Set aside.
- Break the corn in half and place it into your slow cooker on the sides. Then add the potatoes in the middle. Place the pork chops on top. Spread the soup mixture over the top of everything.
- Cover slow cooker and cook on high for 2-3 hours or on low for 4-6 hours. Remember that all slow cookers cook differently. Pork chops should be 145° F internally and potatoes should be tender.
