We have, unfortunately, all been sick in the Petersen household. It’s literally been one of those sicknesses that I can barely muster the energy to fill up a water glass or to change the channel on the remote control. Needless to say, I am not in the mood to cook dinner. Not in the mood at all! That’s where this easiest of easy “recipes” comes into play. It literally has 3 ingredients and can be made in the Instant Pot, oven or slow cooker.

Ingredients/Substitution Ideas

  • Taquitos–any flavor you like
  • Red or green enchilada sauce–I use mild
  • Colby jack cheese–or cheddar

Steps

Pour 1 ½ cups water into bottom of Instant Pot.

In a pot-in-pot dish* lay 6 taquitos on the bottom. Then lay 6 more taquitos on top perpendicular to the others. 

Pour enchilada sauce over the top.

Place the pan on a trivet with handles* and lower the dish into the bottom of the Instant Pot.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 10 minutes. When time is up move valve to venting and remove the lid. 

Sprinkle the cheese on top.

Melt the cheese using an air fryer lid (400 degrees for 3 minutes). If you don’t have an air fryer lid you can place the normal lid on top and melt on the keep warm setting for 5-10 minutes.

Serve and enjoy!

Notes/Tips

  • Pair this easy enchilada casserole recipe with a side of guacamole, black bean salad, shredded lettuce, pico de gallo, refried beans, sour cream, diced tomatoes, diced onions, cilantro, cilantro lime rice or sliced olives.
  • True story! I’ve never bought taquitos before I tried this recipe. There are so many different flavors and you can choose whatever you like best. Some options are chicken and cheese taquitos, steak and cheese taquitos, seasoned ground beef taquitos, southwest chicken taquitos, nacho cheese taquitos, black bean and cheese taquitos, diablo chicken taquitos, and charbroiled chicken breast taquitos.
  • I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot.
  • I used one of these stainless steel pans* for the pot-in-pot cooking.
  • You can double the amount of taquitos you use. Double the amount of enchilada sauce too. Keep the same cooking time.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days. I don’t recommend freezing because the texture will change.

Description

Ingredients

  • 12 taquitos (any flavor you like)
  • 1 (10 oz) can red or green enchilada sauce (I use mild)
  • 3/4 cup shredded colby jack cheese

Instructions

Instant Pot Instructions:

  1. Pour 1 ½ cups water into bottom of Instant Pot.

  3. Pour enchilada sauce over the top.

Oven Instructions:

  1. Preheat oven to 400 degrees.
  2. Spread frozen taquitos into a 9×9 inch baking dish. Bake for 15 minutes.
  3. Remove from oven, pour enchilada sauce over the top and sprinkle with cheese.
  4. Bake for 10 more minutes. 
  5. Serve and enjoy!

Slow Cooker Instructions:

  1. Place taquitos on bottom of slow cooker. Pour enchilada sauce over the top. 
  2. Cover and cook on high for 1 hour.
  3. Sprinkle cheese on top. Cover and cook for 30 more minutes.
  4. Serve and enjoy!

      I made these without the cheese (because I did it by memory and forgot) and they turned out well. The taquitos got a little soggy (probably would have been better with cheese). I added black beans (1 can) as well and served them with shredded lettuce, salsa and sour cream.
      I can’t believe I forgot one ingredient in a 3 ingredient dish but I will be making them again!
