Description
Not in the Mood Enchilada Casserole is made with just 3 ingredients and takes literally 5 minutes of prep time. It’s for those days when you’re not in the mood to cook dinner!

- 12 taquitos (any flavor you like)
- 1 (10 oz) can red or green enchilada sauce (I use mild)
- 3/4 cup shredded colby jack cheese
Instructions
Instant Pot Instructions:
- Pour 1 ½ cups water into bottom of Instant Pot.
- In a pot-in-pot dish lay 6 taquitos on the bottom. Then lay 6 more taquitos on top perpendicular to the others.
- Pour enchilada sauce over the top.
- Place the pan on a trivet with handles and lower the dish into the bottom of the Instant Pot.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 10 minutes. When time is up move valve to venting and remove the lid.
- Sprinkle the cheese on top and melt the cheese using an air fryer lid (400 degrees for 3 minutes). If you don’t have an air fryer lid you can place the normal lid on top and melt on the keep warm setting for 5-10 minutes.
- Serve and enjoy!
Oven Instructions:
- Preheat oven to 400 degrees.
- Spread frozen taquitos into a 9×9 inch baking dish. Bake for 15 minutes.
- Remove from oven, pour enchilada sauce over the top and sprinkle with cheese.
- Bake for 10 more minutes.
- Serve and enjoy!
Slow Cooker Instructions:
- Place taquitos on bottom of slow cooker. Pour enchilada sauce over the top.
- Cover and cook on high for 1 hour.
- Sprinkle cheese on top. Cover and cook for 30 more minutes.
- Serve and enjoy!
