Not in the Mood Casserole

Not in the Mood Enchilada Casserole is made with just 3 ingredients and takes literally 5 minutes of prep time. It’s for those days when you’re not in the mood to cook dinner! 


  • 12 taquitos (any flavor you like)
  • 1 (10 oz) can red or green enchilada sauce (I use mild)
  • 3/4 cup shredded colby jack cheese


Instant Pot Instructions:

  1. Pour 1 ½ cups water into bottom of Instant Pot.
  2. In a pot-in-pot dish lay 6 taquitos on the bottom. Then lay 6 more taquitos on top perpendicular to the others. 
  3. Pour enchilada sauce over the top.
  4. Place the pan on a trivet with handles and lower the dish into the bottom of the Instant Pot.
  5. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 10 minutes. When time is up move valve to venting and remove the lid. 
  6. Sprinkle the cheese on top and melt the cheese using an air fryer lid (400 degrees for 3 minutes). If you don’t have an air fryer lid you can place the normal lid on top and melt on the keep warm setting for 5-10 minutes.
  7. Serve and enjoy!

Oven Instructions:

  1. Preheat oven to 400 degrees.
  2. Spread frozen taquitos into a 9×9 inch baking dish. Bake for 15 minutes.
  3. Remove from oven, pour enchilada sauce over the top and sprinkle with cheese.
  4. Bake for 10 more minutes. 
  5. Serve and enjoy!

Slow Cooker Instructions:

  1. Place taquitos on bottom of slow cooker. Pour enchilada sauce over the top. 
  2. Cover and cook on high for 1 hour.
  3. Sprinkle cheese on top. Cover and cook for 30 more minutes.
  4. Serve and enjoy!
