LSU Casserole
Today’s recipe is a nod to the LSU Tigers and is a great football tailgating recipe! It’s a rice dish with cajun sausage, bell pepper, onions and celery. And of course you can’t forget the cajun seasoning! There are lots of different types of cajun seasoning so know yourself and how hot you want to go. The cajun seasoning I used has lots of flavor (salt is included in it) but it’s not too spicy.
I adapted this recipe to a blog called Buy This Cook That and it’s from their SEC tailgating series. I knew that the Instant Pot would be the perfect tool to cook my version of this dish. Rice is so fast and easy in the Instant Pot (just a 3 minute pressure cooking time with a 10 minute natural pressure release). This is a tasty one pot meal that my family loved and I think you’ll enjoy it too!
Ingredients/Substitution Ideas
- Vegetable oil–or canola oil
- Andouille sausage–or smoked sausage
- Celery
- Onion–or shallots
- Bell pepper–any color
- Chicken broth–or water and Better than Bouillon
- Garlic powder–or 3 cloves of fresh garlic, minced
- Cajun seasoning
- Cayenne pepper
- Hot sauce
- Bay leaf
- Parboiled rice–or long grain white rice
Steps
Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl it around. Add in the sausage and brown for about 5 minutes.

Add in the celery, onion and bell pepper and saute for 3-4 more minutes.

My family doesn’t like bell pepper, so I sauteed in separately and let each person decided if they wanted to add it in 🙄.

Pour in the broth and scrape bottom of pot so that nothing is sticking.

Add in the garlic powder, cajun seasoning, cayenne, hot sauce and bay leaf. Sprinkle in the rice.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid and stir. Remove the bay leaf.

Serve with extra hot sauce and some chopped green onions, if desired.

Notes/Tips
- Serve with cornbread, cheddar biscuits, collard greens, okra, coleslaw or corn on the cob.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

- This recipe is gluten-free. Just make sure your cajun seasoning is gluten-free.
- What is converted/parboiled rice? Don’t confuse converted rice (or sometimes it is called parboiled rice) with pre-cooked or minute rice. Parboiled rice has been processed in its husk by soaking, steaming, and drying. As a result, all the nutrients from the husk are absorbed into the grain before it’s removed. The starch content alters in the process, making cooked parboiled rice less sticky than regular white rice. The rice kernels aren’t clumpy and glued together instead they are more separated. I found a bag of parboiled rice at Walmart next to the normal long grain white rice. Sometimes I buy it at Winco in the bulk section. I have also found it in the orange box (Ben’s brand) next to other rices.

It can be summed up in one word – yum. I used less smoked sausage than requested. Had mushrooms to use up (8 oz.) so chopped those and added them along with the onions, celery and diced mini peppers. I used fresh minced garlic in place of garlic powder. Used long grain rice and it was still a bit chewy, so will let it sit longer next time or will use the parboiled rice.

I’d like to add shrimp to this recipe. Could I saute them with the sausage, or should I just add cooked ones at the end? Thanks for all you do!
I would add them at the end because they’ll overcook if you pressure cook with everything else.
That’s what I thought. I’ll just sauté them first for a few, and then take them out before I put the sausage in. No need to dirty another pan, right? Got to have shrimp in my jambalaya!

Could you please give instructions for making this in a crock pot? I don’t have/want an instapot.
I haven’t tried this one in the crockpot but if I did here is what I would do:
Heat a pan over medium high heat add in the oil and swirl it around. Add in the sausage and brown for about 5 minutes. Add in the celery, onion and bell pepper and saute for 3-4 more minutes. Add to the slow cooker.
Add in the broth, garlic powder, cajun seasoning, cayenne, hot sauce, bay leaf and rice.
Cover and cook on high for 2-3 hours. Remove the lid and stir. Remove the bay leaf.
Serve with extra hot sauce and some chopped green onions, if desired
This looks so easy and tasty! If I wanted to add some frozen cooked shrimp, when would I add it?
I would stir it in after the pressure cooking time is up. Replace lid and let sit on warm for a bit to warm through.
