Description

An easy Instant Pot savory recipe for jambalaya made with andouille sausage and the essentials: celery, onion and bell peppers. A great game day recipe!


Ingredients

  • 1 Tbsp vegetable or canola oil
  • 1 (12 oz) package andouille sausage, sliced into quarter inch rounds
  • 3 ribs of celery, sliced
  • 1 onion, diced
  • 1 bell pepper (any color), seeded and diced
  • 2 1/4 cups chicken broth
  • 1 tsp garlic powder
  • 1 1/2 tsp cajun seasoning
  • Pinch of cayenne pepper (optional)
  • 1 Tbsp hot sauce (plus more for serving)
  • 1 bay leaf
  • 1 1/2 cups parboiled rice (or long grain white rice)

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl it around. Add in the sausage and brown for about 5 minutes. 
  2. Add in the celery, onion and bell pepper and saute for 3-4 more minutes. 
  3. Pour in the broth and scrape bottom of pot so that nothing is sticking. 
  4. Add in the garlic powder, cajun seasoning, cayenne, hot sauce and bay leaf. Sprinkle in the rice. 
  5. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid and stir. Remove the bay leaf.
  6. Serve with extra hot sauce and some chopped green onions, if desired.
