Description
An easy Instant Pot savory recipe for jambalaya made with andouille sausage and the essentials: celery, onion and bell peppers. A great game day recipe!

- 1 Tbsp vegetable or canola oil
- 1 (12 oz) package andouille sausage, sliced into quarter inch rounds
- 3 ribs of celery, sliced
- 1 onion, diced
- 1 bell pepper (any color), seeded and diced
- 2 1/4 cups chicken broth
- 1 tsp garlic powder
- 1 1/2 tsp cajun seasoning
- Pinch of cayenne pepper (optional)
- 1 Tbsp hot sauce (plus more for serving)
- 1 bay leaf
- 1 1/2 cups parboiled rice (or long grain white rice)
Instructions
- Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl it around. Add in the sausage and brown for about 5 minutes.
- Add in the celery, onion and bell pepper and saute for 3-4 more minutes.
- Pour in the broth and scrape bottom of pot so that nothing is sticking.
- Add in the garlic powder, cajun seasoning, cayenne, hot sauce and bay leaf. Sprinkle in the rice.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid and stir. Remove the bay leaf.
- Serve with extra hot sauce and some chopped green onions, if desired.
