Today’s recipe is the blending of two different recipes into one. When I was growing up we’d eat a ham casserole that had a rice base. It was always tasty. That’s recipe number one. And then the second recipe is alfredo with broccoli. Combining all these elements into one dish is a delicious one pot meal that can be prepared in just a few minutes with your Instant Pot.
Ingredients/Substitution Ideas
- Butter–or olive oil
- Shallot–or ½ cup diced onion
- Garlic cloves
- Chicken broth–or water and Better than Bouillon
- Bay leaf
- Cubed ham–or cubed smoked sausage
- Parboiled rice–or long grain white rice
- Poultry seasoning
- Kosher salt
- Pepper
- Frozen veggies–I used broccoli, cauliflower and carrot mix. All broccoli would be good too!
- Bertolli Garlic Alfredo sauce–or another brand of alfredo sauce you like
Steps
Turn Instant Pot to saute setting. When display says HOT add in the butter and let it melt. Add in the shallot and saute for 2 minutes. Add in the garlic and saute for 30 seconds.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Add in the bay leaf. Spread the ham cubes out on the bottom of the pot. Sprinkle the rice over the ham cubes. Sprinkle the rice with poultry seasoning, salt and pepper. Spread the vegetables out over the top of the rice evenly.

Drizzle the vegetables with the alfredo sauce.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.

Stir. Serve and enjoy!

Notes/Tips
- Serve with a side salad, fresh fruit, a dinner roll or coleslaw.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- This recipe can be gluten-free if you use a gluten-free Alfredo sauce.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
- Other recipes you can make with ham are Instant Pot Scalloped Potatoes And Ham and Instant Pot Appalachian Soup Beans.
- You can also make this recipe with another type of rice like jasmine or basmati rice. Follow the green chart for cooking times and water to rice ratio. If you’d like to use brown rice I would not add the vegetables initially because they will get obliterated with the long cooking time. Add them in (cooked) after the pressure cooking time is over.

- 1 Tbsp butter
- 1 shallot, diced

- 8 ounces cubed ham
- 1 cup uncooked parboiled or long grain white rice
- 1 tsp poultry seasoning
- 3/4 tsp kosher salt
- 1 tsp pepper
- 1 (12 oz) bag frozen veggies (I used broccoli, cauliflower and carrot mix)
- 1 cup Bertolli Garlic Alfredo sauce
Instructions
