Italian Parmesan Pot Roast–a flavor-packed beef roast recipe made with pantry seasoning mixes and tomato juice for an easy slow cooker or Instant Pot dinner.

Italian Parmesan Pot Roast

Italian Parmesan Pot Roast

I love this easy dump and go recipe that delivers rich, savory flavor! The meat turns fall-apart tender and you can cook it slow and low in the crockpot or fast in the pressure cooker. If you want to make it even better, you can sear the roast first for extra flavor. Try serving this over garlic parmesan risotto or polenta. Mmmm!

Ingredients/Substitution Ideas

  • Chuck roast–or rump roast
  • Dried minced onion flakes
  • Minced garlic–or 1 tsp garlic powder
  • Au jus packet–or brown gravy mix
  • Italian dressing mix–I like the Good Seasons brand
  • Black pepper
  • Tomato juice–or V8 juice
  • Parmesan cheese

Steps

Place roast in slow cooker. Stir onion flakes, garlic, au jus, italian dressing mix, pepper and tomato juice together and pour over the top of the roast. 

Cover slow cooker and cook on low for 8-12 hours, or until roast is tender.

Serve topped with parmesan cheese.

Notes/Tips

  • Serve with Instant Pot Garlic Parmesan Risotto or mashed potatoes.
  • This also makes amazing sandwiches. Shred the beef and pile it onto toasted hoagie rolls with melted cheese.
  • For extra flavor, sear the roast in a hot pan for a few minutes on each side before adding it to the slow cooker or Instant Pot.
  • I used my 3 quart slow cooker casserole crock. You can also make this in a 4, 6 or 8 quart slow cooker or Instant Pot. This recipe freezes well. Store the shredded beef with some of the juices for up to 3 months.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Description

A flavor-packed beef roast recipe made with pantry seasoning mixes and tomato juice for an easy slow cooker or Instant Pot dinner.


Ingredients

Scale
  • 3 pounds chuck roast, trimmed of excess fat
  • 1 Tbsp dried minced onion flakes
  • 2 Tbsp minced garlic
  • 1.25 oz packet au jus
  • 1 oz packet italian dressing mix
  • 1 tsp black pepper
  • 1 (11.5 oz) can tomato juice
  • 1/2 cup shredded parmesan cheese

Instructions

Slow Cooker Instructions:

  1. Place roast in slow cooker. 
  2. Stir onion flakes, garlic, au jus, italian dressing mix, pepper and tomato juice together and pour over the top of the roast. 
  3. Cover slow cooker and cook on low for 8-12 hours, or until roast is tender.
  4. Serve topped with parmesan cheese.

Instant Pot Instructions:

  1. Pour tomato juice into Instant Pot. 
  2. Add roast into Instant Pot.
  3. Sprinkle roast with onion flakes, garlic, au jus, italian dressing mix and pepper.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 90 minutes. Let the pressure release naturally. Remove the lid.
  5. Serve roast topped with parmesan cheese.

    Karen, this looks yummy! But did you cut up your chuck roast? I prefer whole, use the same cook time? Thanks 😊

      I used chuck steaks but I put the correct cooking time in the recipe card for the whole roast. Enjoy!
