First Lady Roast–tender, well-seasoned beef roast is pressure cooked or slow cooked with onions and broth, then shredded and served with a rich, savory gravy made right in the pot.

First Lady Roast
This tender roast and gravy that you can make in your Instant Pot or slow cooker is a perfect Sunday supper. It gets fork tender in the Instant Pot or slow cooker. No need to slice, it will just tear apart with two forks. Try serving it alongside some mashed potatoes, corn on the cob and garlic green beans. The name comes from First Lady’s Kitchen Pot Roast on YouTube (the original recipe is made on the stove top and in the oven).
Ingredients/Substitution Ideas
- Olive oil–or canola, vegetable
- Beef bottom round roast–or chuck, cross rib
- Kosher salt
- Mrs. Dash
- Onion powder
- Garlic powder
- Beef broth–or water and Better than Bouillon beef base
- Onion
- Cornstarch
Steps
Cut excess fat off roast and pat dry with a paper towel. Mix the salt, Mrs. Dash, onion power and garlic powder together and pat all over the roast.

Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl around. Brown the roast for 4 minutes on each side.

Move roast out of the pot. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
Add roast back into the pot and add in the onions.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 75 minutes. When time is up let pot release pressure naturally (about 15-20 minutes) and remove the lid.

Move roast to a cutting board. Turn Instant Pot to saute setting. In a small bowl stir 4 Tbsp cold water with 3 Tbsp of cornstarch. Stir the slurry into the pot to thicken the gravy. Once thickened turn off the saute setting.


Use forks to break apart roast. Serve with the gravy.

Notes/Tips
- Serve with mashed potatoes, green beans and corn.
- Rub seasoning into the roast a few hours ahead of time for more flavor.
- Don’t rush the natural release in the Instant Pot, it’s essential for tender meat.
- This recipe is gluten free.
- If the roast is quite large, cut it in half so it gets more tender.
- I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

- Heat a large pan over medium high heat and add in the oil and swirl around. Brown the roast for 4 minutes on each side. Add roast to the slow cooker.
- Pour in the broth and add in the onions.
- Cover and cook on low for 6 hours. In a small bowl stir 4 Tbsp cold water with 3 Tbsp of cornstarch. Stir the slurry into the pot to thicken the gravy. Cover slow cooker and cook on low for 1-2 more hours, or until roast is tender.
- Move roast to a cutting board. Use forks to break apart roast. Serve with the gravy.
