Garden of Eden Soup–slow cooker or Instant Pot ham, black eyed peas and vegetable soup. A soup that is full of lots of nutrition and lots of flavor.

Instant Pot or Crockpot Garden of Eden Soup

Garden of Eden Soup

With lots of vegetables this soup could come straight from your garden. Besides veggies it’s got cubes of ham and some black eyed peas. It’s chock full of goodness and every bite is delish. You’re welcome to use frozen veggies or fresh, both turn out well. You can also choose to cook the soup low and slow in the crockpot or fast in your Instant Pot. This makes a full pot so I have lots of lunch leftovers. A bowl of soup provides 6 grams of fiber, 16 grams of protein and only 223 calories! I loved this soup with a dollop of sour cream.

Ingredients/Substitution Ideas

  • Olive oil–or vegetable, canola
  • Onion–yellow, white
  • Garlic cloves–or 2 tsp garlic powder
  • Vegetable or chicken broth–or Better than Bouillon and water
  • Tomato juice–or V8
  • Red potato–or yukon gold, russet
  • Carrots
  • Cabbage–green
  • Mushrooms
  • Black eyed peas–or white beans
  • Frozen green beans–or fresh
  • Frozen sweet corn–or fresh
  • Ham–or smoked sausage
  • Smoked paprika
  • Hot sauce–I used Frank’s hot sauce

Steps

Heat a pan over medium high heat. Add in the oil and onions. Saute for 4 minutes. Add in the garlic and saute for 1 more minute. Transfer to slow cooker. (My slow cooker has a saute setting so I used that)

Add in broth, tomato juice, potato, carrots, cabbage, mushrooms, black eyed peas, green beans, corn, ham and paprika. Stir.

Cover and cook on high for 4 hours or on low for 6 hours.

Stir and add in a few splashes of hot sauce. Ladle into bowls and serve.

Notes/Tips

  • Serve with cornbread, dinner rolls, breadsticks or french bread.
  • I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot. Halve the recipe for the 3 quart pot.
  • What if I don’t have a soup button on my Instant Pot? You can use the manual or pressure cook button on low pressure for 4 minutes instead.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Description

Ingredients

Scale
  • 1 Tbsp olive oil
  • 1 cup diced onion
  • 6 garlic cloves, minced
  • 2 cups vegetable or chicken broth
  • 4 cups tomato juice
  • 1 medium red potato, cut into 1/2 inch cubes
  • 1–2 carrots, grated
  • 2 cups chopped cabbage
  • 1 cup sliced mushrooms
  • 1 (15 oz) can black eyed peas, rinsed and drained
  • 1 (10 oz) bag frozen green beans
  • 1 1/2 cups frozen sweet corn
  • 8 ounces cubed ham
  • 1/8 tsp smoked paprika
  • Hot sauce

Instructions

Slow Cooker Instructions:

  1. Heat a pan over medium high heat. Add in the oil and onions. Saute for 4 minutes. Add in the garlic and saute for 1 more minute. Transfer to slow cooker.
  2. Add in broth, tomato juice, potato, carrots, cabbage, mushrooms, black eyed peas, green beans, corn, ham and paprika. Stir.
  3. Cover and cook on high for 4 hours or on low for 6 hours.
  4. Stir and add in a few splashes of hot sauce. Ladle into bowls and serve. 

Instant Pot Instructions:

  1. Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl around. Add in the onion and saute for 4 minutes. Add in the garlic and saute for 30 seconds. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. 
  3. Add in tomato juice, potato, carrots, cabbage, mushrooms, black eyed peas, green beans, corn, ham and paprika.
  4. Cover and secure the lid into place. Make sure valve is set to sealing. Set the SOUP button to 4 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid. 
  5. Stir in a few splashes of hot sauce. Ladle into bowls and serve.

    Garden of Eden soup was great. We didn’t have any ham so I used smoked sausage. I’ve never cooked with V8 before, it added an amazing flavor to the broth. Very healthy with all the vegetables. Thank you.

      Yes. I would use low pressure instead. Should be just fine.
