Ranch Beef Pot Roast

Ranch Beef Pot Roast–with only 6 ingredients and your Instant Pot or slow cooker you can make this tender roast with potatoes, carrots and savory gravy.

Ranch Beef Pot Roast

This is one of those dump-it-and-forget-it recipes that’s perfect for busy weeknights or a Sunday supper. The chuck roast gets all tender with some ranch seasoning and beef broth, then potatoes and carrots join the party to soak up all that goodness. You can make it in the Instant Pot (done in under two hours) or a slow cooker (set it in the morning and come home to dinner). At the end, you whip up a quick gravy to tie everything together. It’s hearty, comforting, and the kind of meal that makes your house smell amazing! (This recipe is adapted from Slow Cooker Ranch Beef Roast on hiddenvalley.com)

Ingredients/Substitution Ideas

  • Beef Broth–or water and Better than Bouillon
  • Chuck Roast
  • Dry Ranch Dressing Mix–I used Hidden Valley brand
  • Potatoes–Russet or red
  • Carrots–or baby carrots
  • Cornstarch–to thicken the gravy, optional

Steps

Place the beef in the Instant Pot. Sprinkle the ranch dressing mix over the roast and rub it in. Pour the beef broth around the roast.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 75 minutes. When time is up let pot sit for 15-20 minutes, until pin goes down on its own. Remove the lid. Place beef on a cutting board.

Add the potatoes and carrots into the Instant Pot with the broth. Cover and pressure cook for another 10 minutes. Move valve to venting to release pressure and remove the lid.

Place meat on a platter (you can slice or shred). Place carrots and potatoes around the meat. 

Make a cornstarch slurry to thicken the gravy. Stir 2 Tbsp cornstarch together with 3 Tbsp cold water until smooth. Turn Instant Pot to sauté setting. Stir the slurry into the pot until gravy thickens. Turn off Instant Pot. 

Serve gravy with the meat, potatoes and carrots. Salt and pepper to taste.

Notes/Tips

  • Serve with buttery dinner rolls or crusty bread
  • Want more flavor? Toss in a teaspoon of garlic powder, onion powder or 1/4 tsp smoked paprika.
  • You can make it richer by adding in 1 Tbsp butter to the finished gravy or stir in a splash of cream.
  • You can use frozen roast. Add 25 extra minutes to the Instant Pot cook time. No need to change anything else. If your roast seems tough, it just needs more time. Pressure cooking melts connective tissue.
  • This recipe is gluten free.
  • I used my 6 quart Instant Pot*. You can also make this in a 4 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Description

With only 6 ingredients and your Instant Pot or slow cooker you can make this tender roast with potatoes, carrots and savory gravy. 


Ingredients

  • 1 cup beef broth
  • 2 pounds chuck roast
  • 3 Tbsp dry ranch dressing mix
  • 4 medium potatoes, peeled and cut into 1 inch cubes
  • 4 carrots, peeled and cut into 1 inch chunks
  • 2 Tbsp cornstarch

Instructions

  1. Place the beef in the Instant Pot. Sprinkle the ranch dressing mix over the roast and rub it in. Pour the beef broth around the roast.

  6. Serve gravy with the meat, potatoes and carrots. Salt and pepper to taste.

Slow Cooker Instructions:

  1. Place beef in slow cooker. Sprinkle the ranch dressing mix over the roast and rub it in.
  2. Pour the beef broth around the roast. 
  3. Cover and cook on low for 8 hours. Add the potatoes and carrots and cook for 2 more hours. Slice or shred the meat.  
  4. You can make gravy with the juices in the crockpot by making a cornstarch slurry. Stir together 2 Tbsp of cornstarch with 3 Tbsp cold water until smooth. Stir the mixture into the slow cooker. Let cook without lid on high for about 10 minutes. Salt and pepper to taste.
